the manufacture of com
sweeteners has the
unusual ability, after
simple chemical
treatment, to remove
the major sources of
bitterness in grapefruit
juice and navel orange
juice. The product is
called cyclodextrin
polymer, and its donut
shaped molecules ac
tually trap the bit
terness molecules inside
their holes, where they
are held by a weak
chemical bond. Uter,
the bonds can be
loosened with a 1
chemical wash and the
bitterness molecules
removed. The
cyclodeztrin, which is
unchanged by the
process, is subject to
Food and Drug Ad
ministration approval
before it can be used
commercially.
