The product is called cyclodextrin polymer, and its donut shaped molecules ac tually trap the bit terness molecules inside their holes, where they are held by a weak chemical bond. Uter, the bonds can be loosened with a 1 chemical wash and the bitterness molecules removed. The cyclodeztrin, which is unchanged by the process, is subject to Food and Drug Ad ministration approval before it can be used commercially.
