The object of spitting a roast is to have the meat secured to the rotisserie so that, as nearly as possible, it is in balance and it is compact and well fastened. Use a meat thermometer when roasting and you won’t have to guess when your roast is done. Insert a ther mometer at an angle into die heaviest end to the center of the roast so it won’t strike coals or the heating element as it turns. The tip must not touch bone, fat, or the metal spit.
