Potato salad was implicated in three outbreaks, or 47 cases, of type A botulism in the United States since 1969. Baked potatoes used in preparing the potato salad which daused one of the outbreaks were left unrefngerated after baking for a period of tune prior to use in the salad. The FDA now considers baked or boiled potatoes a “potentially hazardous food,” as defined in the agency’s ordinances.
