Friendship Dairies is the New York metropolitan area’s number one producer of cottage cheese. As such, between 500,000 and 800,000 pounds of milk flow through the company’s dairy each day. Until two year’s ago, many tens of thousands of pounds of whey also flowed out of the dairy as a waste by-product of its cheese-making operations. No longer. Friendship’s high lactose and fat context whey is now being put to a better, more profitable use: an economical, easily transportable, highly nutritious powdered animal feed sup plement. Says Martin Schan back, Friendship Dames president and a dairyman his entire life, “The process we use in our Friendship, New York plant is the only one of its kind in the United States. Not only in the lipid dehydration process unique, but so is the concept. “It’s a full cycle - taking a product from cattle milk, processing it for people, taking the whey by-product, re processing it and taking it back to the cattle ” “I think it’s very exciting It’s also more economical for those in the cattle business than using non-fat dry milk or sweet liquid whey.” The complicated mechanical apparatus for reducing the liquid whey to its powdered high fat and lactose form was developed for Friendship by the Dehydrotech Company of New Jersey and stands five-stones tall against the background of forests and rolling foothills of the Allegheny Mountains. The whey to be powdered is skimmed from the many cheese vats in the Friendship plant. It’s brought to enormous tanks and mixed with soybean oil where it’s heated under a vacuum which suspends the particles of whey. From there, the whey-oil-moisture mixture is pumped up through the five-story evaporating tower. The oil and moisture are removed leaving only particular whey whose density is similar to that of spray-dried milk powder. The powdered whey, egg shell to light tan in color, is then run through a drier box to remove excess moisture.
