Eggnog Has English Ancestry
Nog comes from the word, “noggin," meaning a small
drinking vessel with an upright handle Eggnog has been
popular in England for centimes, but it probably came
from the Canary Islands or Spam because it contains
wine. Eggs, milk, ale or sack, a dry wine, are standard
ingredients for eggnog.
Throughout its early years, eggnog was known by many
other names: egg-pop, custard posset, syllabub, milk
punch, flip, one yard of flannel and auld man’s milk. In
structions for making it appeared m diaries and travel
notes. Later it was included in cookbook under “Invalid
Foods’’ 1
However, according to travel diaries, many comforted
themselves with eggnog en route to their destinations.
And eggnog was found at a number of taverns, so it didn’t
take much persuasion to use it for socializing while
engaged in holiday travel.
Eggnog parties were very popular in the nation’s capital
during the whole period between Christmas and New
Year’s. Members of the Cabinet and Congress as well as
Washington socialties looked upon this tune as a good
season to make them rounds. Southerners, then and now,
keep a pitcher of eggnog refrigerated for such a tune as
callers appear.
Whether you make your own or buy it ready-made,
eggnog is an easy refreshment to serve during the
holidays. It’s a sip-able way to toast your friends with a
“Merry Christmas”or “Happy New Year.”
HOT SPICED EGGNOG
Saucepan, 1 quart, Yield: 2 cups
IVz cups dairy eggnog
cup milk
1 stick cinnamon
1/8 teaspoon ground cloves
In saucepan combine eggnog, milk, cinnamon and
cloves. Heat to simmering point, stirring occasionally
Remove cinnamon stick Top each serving with
sweetened whipped cream and a dash of nutmeg

FROTHY EGGNOG
Yield: 3 quarts
8 eggs
% cup sugar
Vz teaspoon salt
1-2 tablespoons rum extract OR brandy extract
1 teaspoon vanilla
2 quarts milk
1 cup whipping cream
Nutmeg
In a large mixing bowl beat eggs at high speed of mixer,
until thick and foamy Gradually add sugar and salt, then
rum and vanilla extracts At low speed gradually add
milk Cover and chill Just before serving, whip cream;
fold into eggnog Pour into punch bowl Serve garnished
with nutmeg
CHRLSTMAS WALNUT KISSES
6 egg whites
1 lb sugar, either 4X or granulated
Beat m mixer V 2 hour at medium speed Fold in 2 cups
black walnuts. Bake 325°F. for 15 minutes
