Eggs, milk, ale or sack, a dry wine, are standard ingredients for eggnog. Throughout its early years, eggnog was known by many other names: egg-pop, custard posset, syllabub, milk punch, flip, one yard of flannel and auld man’s milk. Whether you make your own or buy it ready-made, eggnog is an easy refreshment to serve during the holidays. It’s a sip-able way to toast your friends with a “Merry Christmas”or “Happy New Year.” HOT SPICED EGGNOG Saucepan, 1 quart, Yield: 2 cups IVz cups dairy eggnog cup milk 1 stick cinnamon 1/8 teaspoon ground cloves In saucepan combine eggnog, milk, cinnamon and cloves. Heat to simmering point, stirring occasionally Remove cinnamon stick Top each serving with sweetened whipped cream and a dash of nutmeg Heather Mae Stoltzfus, Paradise FROTHY EGGNOG Yield: 3 quarts 8 eggs % cup sugar Vz teaspoon salt 1-2 tablespoons rum extract OR brandy extract 1 teaspoon vanilla 2 quarts milk 1 cup whipping cream Nutmeg In a large mixing bowl beat eggs at high speed of mixer, until thick and foamy Gradually add sugar and salt, then rum and vanilla extracts At low speed gradually add milk Cover and chill Just before serving, whip cream; fold into eggnog Pour into punch bowl Serve garnished with nutmeg CHRLSTMAS WALNUT KISSES 6 egg whites 1 lb sugar, either 4X or granulated Beat m mixer V 2 hour at medium speed Fold in 2 cups black walnuts.
