RAISIN CREME PUS
1 cup raisins, cooked and drained
IV< cups milk
2 egg yolks
% cup sugar
2 tablespoons flour
1 tablespoon butter
pinch of salt
1 teaspoon vanilla
Bring the milk to a boiling point. Take dry ingredients
and mix with enough milk to make a smooth batter. Add
egg yolks and beat until smooth. Add to boiling milk,
stirring until thickened. Remove from heat and add
butter, raisins, and vanilla. Pour into baked pie crust and
top with whipped cream or meringue when cold.

GOURMET POTATOES
6 medium potatoes
V« cup butter
1% cups sour cream
1 teaspoon salt
V* teaspoon pepper
2 cups shredded Cheddar cheese
% cup finely chopped onion
2 tablespoons butter
paprika
Cook potatoes in skins. Cool, Peel and chop finely. In a
saucepan over low heat, combine cheese and V* cup
butter. Stir until melted.
Remove from heat and blend in sour cream, onion and
seasonings. Fold in the potatoes and turn into a greased 2
quart casserole dish. Dot with butter and sprinkle with
paprika. Bake uncovered at 350° F. for 30 minutes or until
heated through. Serves 8.
MUENSTER CHEESE
gallons sour milk
2 heaping teaspoons soda
cup butter
2 cups sour cream
1 tablespoon salt
buttered mold
Let sour milk set until it is thick like junket. Scald and
pour into cheesecloth Let hang until curds are dry
(overnight or about 12 hours. Crumble curds and mix in 2
heaping teaspoons soda and % cup butter. Let set for 2
hours, then put m top of double boiler Add half of the sour
cream and melt. When melted, add the other cup of sour
cream and the salt. Mix well. Pour into a buttered mold.
Let set until completely solid. Slice

APPLE ROQUEFORT POTATO SALAD
6 medium potatoes
% cup lemon juice
3 tablespoons oil
2 teaspoons salt
% cup mayonnaise
V« cup dairy sour cream
2 tablespoons light cream
1 large red apple, quartered, cored and thinly sliced
Vi-M: cup crumbled Roquefort cheese
lettuce
Cook potatoes until tender. Peel and cut into thin slices.
Place in a large bowl. Combine lemon juice, oil, and salt m
a jar with a screw top. Cover and shake well. Pour over
slices and toss to coat. Cover and chill 3 hours. Just before
serving, combine mayonnaise, sour cream, and light
cream in a small bowl until smooth. Pour over potatoes
and toss well. Add apple slices and cheese. Toss lightly.
Line a salad bowl with lettuce and spoon salad mto bowl.
Garnish with slices of apple.
BEEF PATTIES WITH CHEESE
1% pounds ground beef
1 cup evaporated milk
3 tablespoons minced onion
6 tablespoons quick-cooking rolled oats
2 tablespoons minced parsley
2 teaspoons salt
V* teaspoon pepper
2 tablespoons butter
3 thin slices American cheese
Mix first 7 ingredients and shape into 6 patties. Place in
buttered baking pan and dot with butter. Bake in 350° F.
oven 45 minutes, basting twice with drippings in pan. Cut
cheese slices in half and place a strip on each patty. Bake
10 minutes longer. Serves 6.
