Once the lamb reaches its first birthday, and some up to 14 months, the bones m the leg have finished growing and have ossified and become hard, porous, and brittle. According to NLMB and the USD A, the younger the lamb, the milder the meat’s flavor and the more tender the chops and cuts. The USD/ grading standards determine the classes of ovine meat by three age groups, lamb, yearling mutton and mutton. These classes are used without discrimination between sexes unless the carcass shows the heavy neck and shoulders associated with a ram. In that case, the carcass is graded down depending on the extent of development. The quality grades of young ovine carcasses are prune, choice and good, depending on muscling and marbling. The mature classes also have these same three grades, but the standards are lower for marbling with a greater tolerance for more finish. Yield grades in lamb and mutton classes are stan dards for judging the cutability or amount of meat on the carcass. There are five yield grades numbered 1 through 5, with one being the best. As external finish on the lamb carcasses increase, the yield grade is lowered. The more wasty fat the_ carcass carries, the smaller the yield of lean meat after the fat is tnmmed away. Now that you’ve learned the reasons why lambs and mutton are graded for quality and yield, don’t chuck the leg of lamb you’ve got waiting in the refrigerator if it’s not per fect. But, keeep the facts in mind on your next tnp to the butcher shop so that your dollars will buy the best.
