Sift dry ingredients together and add to liquid. Dough should be soft yet firm enough to roll. Divide dough in four parts. Roll out one part at a time to % inch thickness. Cut with doughnut cutter and drop into deep fat at 375 degrees F. , Fry until a golden brown on both sides. Dram on ab sorbent paper. Shake in a paper bag containing a mixture of sugar and cinnamon or powdered sugar. Yield: 4% dozen doughnuts, QUICK POTATO DOUGHNUTS Instant puff potatoes, enough for 2 servings 3 eggs % cup granulated sugar 2 teaspoons vanilla 2% cups flour 4 teaspoons baking powder 1 teaspoon salt V* teaspoon nutmeg V* teaspoon cinnamon Prepare instant puffs as directed on package for two servings except omit butter and salt. Add eggs, sugar, shortening and vanilla; beat thoroughly. Stir m flour, baking powder, salt, nutmeg and cinnamon. Turn onto generously floured board; knead about 10 times. Roll dough % inch thick. Let rest 20 minutes. In deep fat fryer, heat fat or oil to 375 to 380 degrees F. Cut dough with floured doughnut cutter. Fry doughnuts until brown; dram. Serve frosted, glazed or sprinkled with sugar. Yield: Vh. dozen doughnuts. FILLED DOUGHNUTS 2 packages yeast 1 cup lukewarm water 1 teaspoon sugar 1 cup milk, scalded and cooled Vz cup shortening, part butter % cup granulated sugar IM> teaspoon salt 2 whole eggs 5 cups sifted flour Put first three ingredients in a small bowl and set aside. Mix milk and eggs, add yeast and mix well. Add Vz cup flour, sugar, salt, and shortening. As usual, competition was stiff as entries were plen tiful. Lancaster County exhibitors swept the braided rug class. Ruth Hyatt of Ronks earned the top honors while Mrs. Thomas Denhnger took second place. Linda Oilier, Gap, and Ella Mae Metzler of Manheim took the third and fourth placings in the quilt competition. Mary Ann Ibach of N. Grant Street, Manheim earned third place honors for her needlepoint depicting typical Lancaster County scenes. Kathleen Rottmund, a Lancaster Catholic student, earned a fourth place in the needlecraft division. Harriet Beach, Cashtown and Susan Bousliman, Carlisle judged the com-' petition.
