Add well beaten eggs, mixed with butter milk. Add salt and let stand in saucepan until it separates. Cook until it separates. Then, put thin cloth m colander and pour cheese in. Let this sit until cold and liquid has run off. Put cheese on a plate and slice off. Put on bread and top with molasses to eat. 1 quart milk Vz cup granulated sugar 1 teaspoon vanilla 1 cap powdered milk Vs cup yogurt culture Heat milk to 180 degrees F. Cool down to 110 degrees F. Take % cup of the milk and add the culture to it. Stir in all ingredients. Pour all mto a dish and incubate in 110 degrees to 120 degrees F oven until set (4 to 5 hours). Chill. CHEESE SOUFFLE 3 tablespoons butter 3 tablespoons flour 1 cup milk teaspoon salt 3 eggs 1 cup grated American cheese 2 teaspoons onion, optional 1/8 teaspoon paprika Melt the butter. Add flour and blend thoroughly. Add milk to make a white sauce. Cook until thickened. Add cheese and stir until melted. Beat the egg yolks, salt, paprika, and grated onion, and add to mixture. Stiffly beat the egg whites. Fold into mixture. Place on a greased casserole and set in a pan of warm water. Bake at 375 degrees F for about 40 minutes. Serve at once. Serves six.
