IMPOSSIBLE COCONUT PIE 8 eggs, slightly beaten 2% cups granulated sugar 1% cup self rising flour 4% cups milk 1 stick butter 10 ounce package coconut 1 tablespoon vanilla dash of salt Mix together the eggs, sugar, and flour. Mix separately the milk, butter, coconut, vanilla, and salt. Mix the second mixture well with the first mixture. Put the mixture into greased pie pans. Bake at 350 Degrees F. for 45 to 50 minutes. This recipe makes its own crust. RAISIN RICE PUDDING 2 cups light cream Vi cup uncooked rice Yd teaspoon salt 1 can raisin pie filling 2 tablespoons vanilla 2 cups heavy cream, whipped nutmeg 2 cups milk Vz cup granulated sugar 5 eggs In the top of a double boiler, mix the cream, milk, rice, sugar, and salt; cook for one hour. Stir occasionally. Beat the eggs, stirring constantly, slowly add the rice mixture to eggs. Return rice mixture to double boiler. Continue cooking until mixture coats metal spoon.Chill.Add raisin filling and vanilla to cold rice mixture. Fold in whipped cream. Spoon into serving dish and sprinkle with nutmeg. Chill until firm. DIETER’S CHEESECAKE 2 envelopes gelatin, unflavored % cup granulated sugar % teaspoon salt 2 medium eggs, separated 1 cup skim milk 1 teaspoon lemon rind, grated 3 cups cottage cheese, small curd 1 tablespoon lemon juice 1 teaspoon vanilla Va cup ice cold water % cup non-fat dry milk % cup crackers (about four) 1/8 teaspoon cinnamon 1/8 teaspoon nutmeg Mix the gelatin, sugar, and salt together thoroughly in the top of a double boiler. Beat together the egg yolks and one cup skim milk. Add to gelatin mixture and cook over boiling water, stirring constantly until gelatin is thoroughly dissolved, about eight minutes. Remove from heat; add the grated lemon rind; cool. Sieve the cottage cheese; stir into gelatin mixture; add lemon juice and vanilla. Chill, stirring occasionally until mixture mounds slightly when dropped from a spoon. Fold in the egg whites, stiffly beaten. Beat the Vz cup of ice cold water and the Vz cup of non fat dry milk sohds together with a rotary beater until stiff and mixture stands m peaks. Fold into gelatin mixture. Turn into an eight inch pan and sprinkle top with a mixture of the graham cracker crumbs, cin namon and nutmeg. Chill until firm. Charlotte Hill Blairs ville, Pa. PUMPKIN TORTE 24 graham crackers crushed Vz cup granulated sugar Vz cup melted butter 2 eggs, beaten % cup granulated sugar 8 ounces cream cheese 2 cups pumpkin 3 egg yolks Vi cup granulated sugar Vz cup milk Vz teaspoon salt 1 tablespoon cinnamon 1 package plain gelatin V* cup cold water 3 egg whites Mix graham crackers, sugar, and melted butter and press into a 9 by 13 inch pan. Mix the 2 beaten eggs, the % cup sugar, and the cream cheese, pour over crust. Bake for 20 minutes at 350 Degrees F. Cook pumpkin, egg yolks, sugar, milk, salt, and cinnamon until thickened. Remove from heat. Add gelatin dissolved in cold water. Cool. Beat egg whites and V* cup sugar and fold into pumpkin mix ture. Pour over cooled crust Top with whipped cream. BAKED CABBAGE CASSEROLE 1 small head of cabbage 2 cups sliced sausage dash of pepper 2 eggs 1 cup milk 2 cups diced potatoes 1 teaspoon salt 3 tablespoons butter 4 slices cubed breaci Mix the eggs, milk and bread cubes. Lane a baking dish with cabbage leaves. Cut remaining cabbage in small pieces. Mix all ingredients together except butter. Put in cabbage-lined dish, dot with butter and bake until soft in 350 Degree F. oven. BAKED CHEESE FONDUE 1 cup stale bread crumbs or croutons 1 cup diced cheese 1 cup milk 3 eggs 1 tablespoon soft butter v % teaspoon salt Mix bread cubes, cheese, and butter. Add egg yolks beaten well with fork. Add the salt. Heat the milk to scalding. Do not boil, and pour over rest of ingredients and mix well. Beat egg whites very stiff and fold into mixture until blended. Pour into small greased casserole. Bake at 350 Degrees F. for 30 to 35 minutes. AonaNolt New Holland, Pa. Mrs. Jacob M. QUICK FRUIT DUMPLINGS 2 cups flour Vz teaspoon salt 1 tablespoon baking powder 2 tablespoons granulated sugar % cupmargarine % cup milk fruit 2 tablespoons granulated sugar cinnamon 2 tablespoons butter Measure flour, salt, baking powder, and sugar. Measure margarine and cut into above mixture with pastry blender until mixture is like coarse com meal. Measure milk and pour into flour shortening mixture. With a fork, mix lightly and quickly until all dry ingredients are moistened. Divide the dough mixture into fourths and roll each out onto a lightly floured surgace until thin Then cut into small triangles. Place a piece of fruit on each, add a little butter, sugar and cinnamon, and bring the sides up around the fruit, etc., and pinch together at the top and sides. Place on a greased baking sheet and bake in 400 Degree F. oven for about 20 minutes or until lightly browned. Remove to cooling rack. May be eaten worm or cold as is or with milk and sugar. STRAWBERRY MILK SHAKE .. 1 pint strawberries 1 pint milk 1 cup granulated sugar, if strawberries unsweetened 1 pine ice cream Put the above ingredients, except the ice cream, in a blender and mix for about two minutes. Add one pint of ice cream. Serves four people. ANGEL FOOD DELIGHT angel food cake mix whipped cream topping 1 cup confectioners sugar 1 package, 8 ounces, cream cheese cherry or blueberry pie filling Prepare angel food cake m a tube pan. Let cool. Cut cake m % mch serving shces and arrange half of cake m an oblong pan. Mix together the whipped cream topping, sugar, and cream cheese, mixing until creamy. Spread filling on layer of angel food cake, then put another layer of cake on filling. Cover with cherry or blueberry pie filling.
