State Lancaster Farming, Saturday, March 31,1979—85 CARROT CASSEROLE 1 pound carrots 8 cups cubed bread 1/2 cup diced onion 1 cup celery 2 teaspoons salt 1 teaspoon dried parsley 3/4 cup melted margarine 2 eggs Peel carrots, dice and cook in water until very soft. Drain and mash with a fork until fine. Mix bread, onion, parsley, celery, salt and margarine. Add well beaten egg. Add mashed carrots. Bake in 1% quart casserole at 350°F for 20 minutes or mbre. This makes a colorful casserole. FAMILY’S FAVORITE 2 tablespoons shortening 1 pound hamburger 1 teaspoon salt dash of pepper 1 teaspoon onion flakes 2 pans tomato sauce (8 ounce cans) 1 package (8 ounces) noodles 1 package (3 ounces) cream cheese 1 cud sour cream 1/2 cup grated Cheddar cheese Brown meat in fat. Add onion flakes, salt, pepper and tomato sauce. Cover and cook slowly for 15 to 20 minutes. Cook noodles and mix sour cream and cream cheese. Pom layers of noodles (about %) in bottom of greased casserole. Spread with 1/3 sour cream-cream cheese mixture. Cover with 1/3 meat mixture. Repeat layers twice. Sprinkle with cheese. Bake 20 minutes or until bubbly in a 350°F. oven. CHICKEN CASSEROLE 1 large fryer (about 3 pounds) cut up 1/2 milk 1/4 cup flour 7 tablespoons butter salt and pepper 1/2 pound fresh mushrooms, sliced 2 cups sour cream paprika Dip chicken pieces into milk, then roll in flour. Brown on all sides in hot butter. Put chicken in a 3 three quart casserole and sprinkle with sale and pepper. Next brown mushrooms lightly in butter remaining from chicken. Place mushrooms on top of chicken and season. Cover and bake in 350°F. oven for one hour, or until chicken is tender. Next add sour cream seasoned with 1/2 teaspoon salt.
