* Junior Cooking Edition The cookie recipes have poured in from our junior cookers recently and so we are again featuring a wide range of those delicious recipes for you to try. They include cowboy cookies, molasses crinkles, peanut butter cookies, molasses cookies, chocolate chip cookies, raisin lemon rt * o cookies, soft sugar cookies, and caramel coated pop corn. COWBOY COOKIES 1 cup granulated sugar 1 cup brown sugar 1 cup shortening 2 eggs 2% cups flour % teaspoon salt Vz teaspoon baking powder 1 teaspoon baking soda 2 cups oatmeal 1 cup coconut 8 oz. chocolate chips 1 teaspoon vanilla Cream sugar and shor tening together, then add eggs and beat well. Sift flour, salt, baking soda, and baking powder together and add to creamed mixture. Add oatmeal, chocolate chips, coconut, and vanilla. Stir well. Drop onto cookie sheets and bake at 350°F. until done. Elaine Newswanger Age 10 Morgantown, Pa. XXX EDITH’S MOLASSES CRINKLES Vh cups shortening 1 cup brown sugar 1 cup granulated sugar 2 eggs Vz cup molasses 5 cups flour Vz teaspoon salt 3 teaspoons baking soda 1 teaspoon cloves 2 teaspoons cinnamon 2 teaspoons ginger Cream shortening, then add sugars and beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Add molasses. Sift flour, salt, baking soda, and spices together and blend into the first mixture. Stir until well blended. Chill. Shape into balls about the size of a bing cherry and drop in granulated sugar. Coat all over with sugar and place on a greased baking sheet. ITT RAISIN LEMON COOKIES 1 cup shortening (melted) 1 pound margarine (melted) 4% cups granulated sugar 6 eggs 6 tablespoons milk 3 teaspoons lemon extract 7% cups flour 4% teaspoons cream of tartar 4% teaspoons baking soda 2 teaspoons salt 3 cups chopped raisins Mix shortening, melted margarine, sugar, and eggs. Add milk and lemon extract. Sift flour, cream of tartar, baking soda, and salt together. Add dry ingredients and chopped raisins to mixture. Roll in balls the size of walnuts. Flatten slightly with a fork. Bake at 400°F. for 10 minutes or until done. This recipe makes about 11 dozen cookies. Malinda King Age 8 Ainille, Pa.
