Add meat, onions, and parsley; brown slightly. Add diced potatoes, seasonings and milk and cheese. Cover and cook over low heat until potatoes are soft. Mix flour with enough milk to make a smooth paste and add to mixture until thickened. QUICKIE POTATOES 4 medium sized potatoes legg 4 tablespoons cheese (quick melting) 1% tablespoons butter 4 sprigs parsley, chopped or 2 teaspoons dehydrated parsley flakes Va teaspoon onion salt (optional) Salt and pepper to taste Dice potatoes and cook in salt water until soft. Potir off water. Beat the egg and add other ingredients to potatoes. Bring to boiling point, but do not boil. Stir occasionally until butter and cheese are completely melted. Serves four. POTATOES AMD HAM SALAD 1 can (10% oz.) cream of celery soup % cup water , 2 teaspoons vinegar 1/8 teaspoon pepper 3 cuds cubed cooked potatoes 1% cups cubed cooked ham V* cup diced sweet pickles 2 tablespoons minced green onions Sliced hard cooked egg Parsley sprigs In large bowl blend soup, water, vinegar, and pepper. Add potatoes, ham, pickles, and onions. Chill. Garnish with egg and parsley. Makes four servings. To serve hot, increase water to % cup. Prepare as above. Heat now and then. XXX GREEN POTATOES 6 medium potatoes 1 cup finely chopped raw spinach 1 cup chopped parsley 2 tablespoons shortening Salt, pepper, to taste Wash, peel and slice potatoes. Boil in salted water until almost tender; drain and dry over heat. Combine spinach and parsley and steam seven to 10 minutes. Drain and add them to the potatoes. CRAB STUFFED POTATOES 4 medium Idaho potatoes 1 (6% oz.) can crab meat % cup butter or oleo Vz cup light cream 1 teaspoon salt 4 teaspoons grated onion 1 cup sharp yellow cheese Vz teaspoon paprika Pepper to taste Scrub potatoes wellj, dry thoroughly. Put in oven and bake at 32S*F. until you can pierce with fork. Cut the baked potatoes lengthwise and scoop out potato and whip with butter, cream, salt," pepper, onion and cheese. With fork mix in crab meat and refill the potato shells. Sprinkle with paprika and reheat in very hot oven about 15 minutes. These freeze nicely. Serves four.
