knuckles and the rounds are
sold to another packer. The
knuckles can then be made
into dry beef or lean ground
hamburger.
Host Acres also sells the
hides for car upholstery, a
market much influenced by
demand for automobiles.
The offal goes for dog food,
and the pancreas glands are
sold for the extraction of
insulin. Sometimes Host
Acres also keeps the bile.

County butchers do not find
the price prohibitive.
Probably one of their
major concerns and
problems is the risk they
take on the animals they buy
at market. Buymg on con
signment from farmers is
not as risky for them
because if the cow is con
demned, it is the farmer who
takes the loss.
The size of their operation
does create a problem for
them, however. As with
small farming, the small
butcher runs the risk of
having Ms product price
undercut by a large volume

Ephrata Jr. Ag Club
cuts browse for deer
EPHRATA - Ten mem
bers of the Junior
Avripiijtural Club of Ephrata
Junior High School recently
travelled to Tioga County
to cut browse for deer.
Making the weekend trek
were: Vernon Martin, Lititz;
Galen Sauder, Ephrata R 2;
Daryl Martin, Ephrata R 2;
Carl Snavely, Lititz Rl;
Charles Burkholder,
Ephrata; Marlin
Oberholtzer, Ephrata Rl;
Keith Martin, Lititz R 4;
Daryl Martin Lititz R 4; Jim
Bollinger, Stevens Rl; and
Jay Martin, Ephrata. The
members were accompanied
by Willis Burkholder and
Rev. Leonard Martin.
Cutting browse for deer is
especially important at this
time of the year due to the
continuous snow cover
present since October. Deep
crusted snow will prevent
deer and other animals from
feeding on the soil surface.
They depend on new woody
growth of trees for food.

When the Lancaster
County group cut browse,
the snow'was approximately
two feet deep, making the
walking and cutting difficult.
About one acre of browse
was cut in State Games
Lands 37 under the super
vision of David Brown,
Games Lands Manager for
Tioga and Potter Counties.
The group was com
plimented on their interest
and effort in cutting the
browse under adverse
conditions.
The members stayed at
Martin’s hunting camp
located near Draper.
Snowmobiles were used to
make the 1% mile trip to the
cabin. Highlights of the trip
included tours of the Pa.
Lumber Museum, Denton
Hill Ski Area, Hills Creek
State Park, Pa. Grand
Canyon, and the Moms
Trout Hatchery. The group
also had a chance to go ice
fishing and observe beaver
houses.
