Remove from heat. Refrigerate any extra sauce. Makes
about two-thirds cup mustard sauce.
EGGS A-LA GOLDENROD
4 slices toast
4 hard boiled eggs
Butter, melted
Salt
Pepper
2 tablespoons flour
Milk
Put egg yolks through strainer, and cut up egg whites.
Set aside. Make a white sauce of melted butter, salt.

Mild tomato sauce
1 teaspoon butter or olive oil per person
In individual casseroles arrange a bed of drained
canned peas. Break over them two eggs, side by side. Add
two pieces boiled ham, one at each side, so they do not
cover eggs. Pour two or three tablespoons tomato sauce
over all. Add butter or olive oil. Decorate with strips of
pimiento. Cool under moderate broiler heat until eggs are
set or cooked as much as each person likes them.

2 eggs, separated
Vz cup drained cooked chopped broccoli
1 jar (2-Ms oz.) sliced mushrooms, drained and chopped
1 medium canned or peeled fresh tomato, chopped
1 teaspoon lemon juice
% teaspoon salt
one-eighth teaspoon garlic powder
one-eighth teaspoon basil
Dash pepper
V* teaspoon cream of tartar
1 tablespoon grated Parmesan cheese
Preheat oven to 350 degrees F. In small mixing bowl
combine egg yolks, vegetables, lemon juice, salt, garlic
powder, basil, and pepper. Beat egg whites and cream of
tartar just until whites no longer slip when bowl is tilted.
Gently fold yolk mixture into whites. Heat ovenproof
non-stick skillet over medium heat until hot enough to
sizzle a drop of water. Gently turn egg-vegetable mixture
.into skillet. Put in oven and bake for about seven to 10
minutes or until top springs back when touched lightly.
Sprinkle with Parmesan cheese. Serve immediately.
About 264 calories per serving. Makes one serving. Note:
To ovenproof skillet, wrap foil around handle.

at Lancaster as the site of
their 1977 annual mem
bershipmeeting.
A one-day session has been
slated to begin at 8 a.m., on
November 14th, dovetailing
with NEPPCO’s industry
event.
