In small mixing bowl combine egg yolks, vegetables, lemon juice, salt, garlic powder, basil, and pepper. Beat egg whites and cream of tartar just until whites no longer slip when bowl is tilted. Gently fold yolk mixture into whites. Heat ovenproof non-stick skillet over medium heat until hot enough to sizzle a drop of water. Gently turn egg-vegetable mixture .into skillet. Put in oven and bake for about seven to 10 minutes or until top springs back when touched lightly. Sprinkle with Parmesan cheese. Serve immediately. About 264 calories per serving. Makes one serving. NEMA to meet in Lancaster LANCASTER Recognizing Lancaster County as the fast growing egg production region that it is, the Board of Directors of Northeast Egg Marketing Association (NEMA) has selected the Continental Inn at Lancaster as the site of their 1977 annual mem bershipmeeting. A one-day session has been slated to begin at 8 a.m., on November 14th, dovetailing with NEPPCO’s industry event. Hank Simpson, president . of NEMA, reported that the sessions will be devoted to SLIM-DOWN OMELET assessing egg marketing trends, to looking at coun trywide egg promotion, and to grappling with the potentials of egg export. A roster of speakers for the day includes United Egg Producer vice president for governmental relations James Fleming; Gregory Murch, U.E.P.’s director of marketing, and Chris Bushway, American Egg Board’s promotion coor dinator for the Northeast.
