for, eggs can fill the bill. This week’s recipes all center
around a variety of foods which can be made from this
nearly perfect food.
Eggs are low in calories (only per large egg), but rich in
high-quality protein. They also contain a healthy dose of
the vitamins A, D, and the B complex along with the
minerals iron and phosphorous.
When you find yourself saying, “What can I fix for lunch
(supper or breakfast), reach for eggs. They are simple
and lend themselves to a variety of foods.

SCOTCH EGGS

Roll hard-cooked eggs in crumbs, then dip in beaten egg
which has been mixed with water. Dip into crumbs again.
Let stand 15 minutes at kitchen temperature to dry
slightly. Divide sausage meat into six portions. Wrap each
crumbed egg with sausage. Cover evenly and retain shape
of egg. Roll again in beaten egg and crumbs. Let dry about
15 minutes.
Fry in deep, hot fat (375 degrees F) about five minutes
or until sausage is cooked and browning. Drain on thick
paper towels. Chill. Serve whole or cut in half with salad.
Makes six to 12 servings.

EGG TOPPED CAULIFLOWER
medium cahflower
4 cups water
1 teaspoon salt
3 tablespoons butter, lightly browned
1 hard cooked egg, chopped
1 teaspoon minced parsley or dill
Trim large outer leaves of cauliflower, letting small
tender leaves remain. Cut deep cross m center of stalk.
Bring water and salt to a boil in four quart saucepan. Add
cauliflower stalk and simmer uncovered for two minutes.
Then, cover and simmer until crisp-tender for about 10 to
12 minutes. Lift to colander and drain well. Put in heated
serving dish. Pour hot butter and sprinkle with egg and
parsley. Makes four servings.
QUICK-MIX CHOCOLATE
MOUSSE
1 package (6 oz.) semi-sweet chocolate morsels
Vz cup hot brewed coffee
4 eggs, separated
% to 1 teaspoon rum or brandy extract
Vi teaspoon cream of tartar
3 tablespoons sugar
Whipped Cream, optional
Reserve eight chocolate mosels for garnish, if desired.
Place remaining morsels in blender container. Blend at
medium speed 10 seconds. Scrape down sides of blender
container with rubber spatula, if necessary. Add coffee.
Blend at medium speed five seconds. Add egg yolks and
extract. Blend at medium speed 15 seconds or until
smooth. In mixer bowl, beat egg whites and cream of
tartar until soft peaks form. Add sugar, one tablespoon at
a tune, beating constantly until sugar is dissolved and
whites are glossy and again stand in soft peaks. Gently
fold chocolate mixture into meringue. Pour into eight
individual dessert dishes or a five-cup serving bowl.
Refrigerate at least one hour. To serve, garnish with
whipped cream and reserve chocolate morsels, if desired.
Makes eight servings. Note: Rub just a bit of meringue
between thumb and forefinger to feel if sugar has
dissolved.

RICE AND CHEESE SAUCE
Vi cup butter
Vi cup finely chopped green pepper
% cup sliced fresh mushrooms or 1 can (4 oz.) sliced
mushrooms, drained
3 tablespoons flour
1 teaspoon salt
