Be meticulously clean in preparing the food. Use plenty of soap and water on hands as well as utensils. Do the same when washing the dishes at picnic grounds before using again. Keep all perishables in the refrigerator until needed. Freeze foods such as sandwiches, meats, fish and poultry products, and let them thaw on the way to the picnic. Water frozen In half gallon milk cartons will help keep the picnic basket' cool and supply ice for refreshing drinks at the picnic. Hot foods should be kept at least 140 degrees F. Large insulated jugs, preheated with hot water, will usually maintain temperature while transporting foods to picnic. Take along as many non perishable foods as possible - potato chips, fresh or canned fruits and unopened canned meat for fish. Avoid using foods which are particularly susceptible to- food poisoning such as - creamed dishes, cream sauces, gravies, custard and cream pies, eclairs and cream puffs. Use acid ingredients to discourage growth of bacteria. Vinegar, lemon juice, tart salad dressings, pickles and relishes can help safeguard the very vulnerable sandwiches and potato salad. Check on drinking water supply and if necessary, take drinking water along. Rember that clean running water is not always pure. Do not let left-over food sit in hot sun after the meal is over. Line picnic basket or box with newspapers for extra insulation. Disposable plates, forks, drinking straws and spoons save time and energy. Don’t forget paper napkins and a roll of paper towels always come in bandy. Fill vacuum bottles or jugs just before leaving. Chilled melons are a quick and easy dessert and also help keep the picnic basket cold. Keep picnic seasonings in a particular place t - individual salt and pepper shakers, catsup, mustard, sugar in a glass jar or shaker. Having them all together will save time when packing the basket - and you won’t forget the essentials. Chilled individual 6-ounce cans of juice are a convenient and popular beverage. C. - The U. S. Department of Agriculture has announced that the Commodity Credit Corporation (CCC) has in creased interest rates for financing sales of U. S. agricultural commodities eligible under the CCC Export Credit Sales Program. CCC increased six and 12 month financing by one per cent.
