Use Caution With
Slow-Cooker
Low Temperatures
If you are planning to buy
or already own a slow
cooker, pay extra attention
to which low setting you use.
Some manufacturers extend
the low-heat range of their
slow-cooker to add ver
satility.
But some slow-cookers
permit you to set the tem
perature below 145 degrees,
and if used improperly, may
allow bacteria capable of
causing food-borne illnesses
to grow and survive. Bac
teria grow in temperatures
ranging from 40 to 140
degrees and may survive in
temperatures above 140.

Spice and Herb
Prices Rising
Prices of pepper and other
spices and herbs are going
up because of speculation,
fuel costs, poor crops and
competition for growing
space. Some of the reasons
you are paying more for
spices and herbs.
The price of black pepper
has risen 50 percent during
the past year. Governments
in the producing countries
such as India and Indonesia
or speculators primarily
control the pepper market.

way to tell when a roast is done
Place it as near to the center as
possible, in the thickest part of
the roast The tip should not
touch bone or fat Generally, beef
is considered rare when roasted
to 140 degrees, medium at 160 and
well done at 170
