Some manufacturers extend the low-heat range of their slow-cooker to add ver satility. But some slow-cookers permit you to set the tem perature below 145 degrees, and if used improperly, may allow bacteria capable of causing food-borne illnesses to grow and survive. Bac teria grow in temperatures ranging from 40 to 140 degrees and may survive in temperatures above 140.
