Now that the Christmas
rush is behind, why don’t you
take a minute to sit down and
copy your favorite recipe.
Then send it along to us in
care of “Home on The
Range.” We are anxious to
hear from our many readers.
We would also like to share
with other readers any
kitchen or household tips
that you might feel have
been helpful to you. To show
our appreciation for your
recipes and ideas we’ll send
you a brightly decorated
potholder.
No-Fry Doughnuts
2 packages active dry yeast
V* cup of warm water (105-
115) degrees
Vh. cups of lukewarm milk
(scalded then cooled)
Vz cup sugar
1 teaspoon salt
1 teaspoon nutmeg
V 4 teaspoon cinnamon
2 eggs
1-3 cup shortening
Vh cups of flour
: /fe cup of butter or margarine
melted
Mix % cup sugar and %
teaspoon cinnamon in a
bag
In a large bowl, dissolve
yeast in warm water. Add
milk, sugar, salt, nutmeg,
cinnamon, eggs, shortening
and 2 cups of flour. Blend %
minute on low speed

scraping bowl constantly.
Beat two minutes medium
speed scraping bowl oc
casionally. Stir in remaining
flour until smooth. Cover and
let rise in warm place until
double - 50-60 minutes.
Turn dough onto well
floured cloth covered board
roll around lightly to cover
with flour. With floured
stockinet covered rolling pin
gently roll dough about l h
inch thick. Cut with Vh inch
donut cutter.
Lift doughnuts carefully
with spatula and place 2
inches apart on a greased
sheet.
Brush doughnuts with
melted butter, cover and let
rise until double about 20
minutes.
Heat oven to 425 degrees.
Bake 8-10 minutes or until
golden. Immediately brush
with melted butter and shake
in cinnamon sugar. Makes
Vh to 2 dozen.

Pumpkin Chiffon Cake
2 cups sifted cake flour
1 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
x h teaspoon cloves
% teaspoon nutmeg

Mz cup salad oil
9 egg yolks
2-3 cups water
% cups mashed pumpkin
l k teaspoon cream of tarter
9 egg whites
Sift dry ingredients into
mixing bowl; add in order
salad oil, egg yolks, water,
pumpkin and beat till satin
smooth. Add cream of tarter
to egg whites; beat to very
stiff peaks. Pour egg yolks
batter in thin stream while
gently folding. When well
blended pour into an
ungreased 10 inch tube pan.
Bake at 325 for 55 minutes
then increase heat to 350
degrees and bake 10
minutes. Invert remove
when cool.

Hamburger Soup
1 cup chopped onion
% cup chopped green pep-
pers
2 tablespoons shortening or
oil
1 pound ground beef
2 cups tomato juice
1 cup sliced carrots
1 teaspoon salt
Vs teaspoon pepper
1 teaspoon seasoned salt
1 cup diced potatoes
1-3 cup flour
1 quart milk
In a large skillet cook

onion and green pepper in oil
till tender but not brown.
Add hamburger; cook til
browned. Stir in tomato
Juice, carrots and
seasonings. Cover and cook
over low heat till carrots are
partially cooked. Add
potatoes and cook till both
vegetables are tender.
Combine flour with 1 cup of
the milk; stir into soup
mixture. Add remaining
milk. Heat to boiling and
cook 2-3 minutes longer.

5 cups real dry cheese
1 teaspoon soda
% cup butter or margarine
1 cup hot cream
2M: teaspoon salt
Work soda in the cheese
that has been scalded from
sour milk. Then melt butter
into saucepan and have it
hot. Add cheese, stir con
stantly until cheese is melted
and smooth. Add hot cream a
little at a time. Add salt. Line
loaf pan with waxed paper.
Pour mixture in, let cool and
slice.

Strawberry Pie
1 quart frozen or fresh
berries
1% cups granulated sugar
Vz cup redisall or instant
clear jell.
Mix redisall with sugar
first.
Mash 1 quart berries and
mix with dry mixture. Put
half of the glaze in bottom,
whole strawberries in
center, and the rest of glaze
on top. Top with whipped
cream. This gives a 9 inch
pie.

Grape Butter
2 quarts fresh concord
grapes
2 quarts sugar
4 tablespoons water
Cook 20 minutes after it
reaches a rolling boil. Put
through colander then bring
to boil and put in jelly
glasses. Seal with parafin.

A new year has begun and
all of us are likely to think of
a few ways in which we could
improve ourselves. But for
most people it will just be a
continuation of the same
daily life as before. If we are
surrounded by family and
friends and are in good
health we simply don’t
realize our many blessings.
This past season my sister
and her family drove in from
Michigan and explained how
much it meant to her to visit
home territory again, even
though the preparations for a
week’s trip are enormous.
Our daughter phoned on
Christmas day for a long talk
with everyone and we plan to
send her a tape of our ac
tivities. It seems that home
and family are appreciated
more by those who are far
away.
“If winter comes, can
spring be far behind?”
We’ve heard this statement
many times and it was what
I thought of when I got my
seed catalog in the mail ten
days ago.
The cover is colorful with
flowers, tomatoes and a cut
cantaloupe. In leafing
through the pages every hue
and tint seems to strike the
eye. I simply must try a few
new kinds of flowers next
year or maybe plant okra
and kohlrabi again as the
younger children don’t
remember them.

cans cream of celery soup
cups macaroni
quart tomato juice
1 lb. grated cheese
Fry bacon and remove
from pan, add onions and
hamburger in bacon juice.
Pour in roaster. Cook
vegetables separate, then
place in roaster. Bake IVz
hours at 350 degrees.

house and study antique
maps of our township or read
biographies of some of its
former citizens. As the
flames and sparks shoot
upward and its warmth
envelopes me, I count the
weeks until the sun will
warm me.
Thought For Food
Greek Stuffed Eggplant
Parboil eggplant (3 small) 12-
15 minutes in boiling water. Re
move from water; cut in half
lengthwise, removing pulp to
within Vi inch of skin. Chop pulp
in small pieces; reserve. Brush
cut surface of eggplant with I*4
tablespoons lemon juice. Mix with
1 pound ground lamb. Saute lamb
in 2 tablespoons of olive or salad
oil until pink color is gone. Add:
reserved eggplant pulp, % cup
bread crumbs, 1 beaten egg, 2
tablespoons parsley flakes, % tea
spoon oregano leaves, \k teaspoon
garlic salt, and Vz teaspoon
ground black pepper. Mix well
Fill shells with mixture. Top each
with V* cup toasted bread cubes.
Place in greased baking pan. Bake
in preheated moderate oven
350 F-30 minutes. Serves six.
