What would a busy housewife and mother like Miriam do in her spare time? She says “I like to make afghans.” She has crocheted three. She also has crocheted four shawls and several doilies. She is working on crewel embroidered pictures and crocheting a tablecloth now. However, this is mostly winter work. She says “I love to read.” She prefers light novels on the religious side and biographies. She says “I love to study the Bible and books concerned with it. She gets some books from the library but buys most of her books. She belongs to Word Inc. Book Club in Texas and to Christian Herald Family Book Club. Magazines she gets are Guideposts, Christian Herald, Decision, Readers Digest and The Lutheran. Another hobby is collecting teapots. Moores enjoy traveling and have taken an auto trip to California and two to Canada. Mrs. Moore gives us several desserts her family especially enjoy: YULE CHIFFON CAKE +2 cups sifted all-purpose western flour 1% cups sugar 3 teaspoons baking powder 1 teaspoon salt Vz cup Wesson oil 7 unbeaten (medium) egg yolks 3 /* cup cold water 2 teaspoons vanilla % teaspoon cream of tartar 1 cup egg whites (7 or 8) +With cake flour use 2V* cups flour and 5 egg yolks. Sift first 4 ingredients together. Add Wesson oil, egg yolks, water and vanilla. Beat until smooth with spoon (medium speed on electric mixer 1 minute). Add cream of tartar to egg whites in large mixing bowl. Beat with rotary beater until whites form stiff peaks (high speed on electric mixer 3 to 5 minutes). DO NOT UN DERBEAT. Pour batter gradually over beaten egg whites, gently folding with rubber scraper just until blended. DO NOT STIR. Pour into ungreased 10 x 4 inch tube pan. Bake 55 mmutes at 325 degrees, then increase to 350 degrees for 10 to 15 minutes, until top sprmgs back when lightly touched. Turn pan upside down, placing tube over neck of funnel or bottle; let hang until cold. Loosen with spatula. Ice cake with fluffy white icing. Decorate with small candies or candied fruits if desired. BANANA CAKE V-h cups sugar Vi cup shortening 2 eggs Vi cup sweet milk 1 teaspoon soda 1 teaspoon vanilla 2 cups flour 2 or 3 mashed bananas J 4 teaspoon salt Mash bananas, add salt, and set aside till last. Mix batter and add bananas Walnuts may also be added if desired To mix batter combine sugar and shortening, mixing till creamy, add eggs. Blend till smooth and add milk and dry ingredients alternately. Bake at 350 degrees for about 35 minutes or until done. MIDNIGHT CAKE I'-i cups sugar + cup shortening 2 eggs cup cocoa 1 cup hot water ] cups flour RED VELVET CAKE or RED DEVILS CAKE Vz cup butter or margarine IVz cups sugar 2 eggs (beaten) Mir 2 large tablespoons cocoa with 2 ounces red food coloring and add to above mixture. Then add: 1 teaspoon salt 1 teaspoon vanilla 1 cup buttermilk Add to mixture. Then add: 2Va cups flour Add last: 1% teaspoons soda and 1 tablespoon vinegar Bake at 350 degrees for about 35 minutes. Makes two 7 inch layers. ICING FOR VELVET CAKE Make paste of 5 tablespoons flour and 1 cup milk, miring carefully to eliminate all lumps. Boil, over low heat stirring constantly, till thick. Cool, then beat 1 cup granulated sugar, 1 cup butter and 1 teaspoon vanilla. Mix with milk paste and stir until desired consistency and spread on cake. Makes a soft fluffy icing. CHOCOLATE BROWNIES Melt in double boiler: 2 squares semi-sweet chocolate 1-3 cup shortening Add: 1 cup sugar 2 eggs % cup flour % teaspoon baking powder ft teaspoon salt % cup broken nuts Pour into 8 inch pan and bake at minutes. FRUIT COBBLER Va cup sugar 1 tablespoon butter 1 cup flour 2 teaspoons baking powder Vz cup milk Mix and put in baking dish (11 x 9 x 1%"). Mix 1 cup fresh fruit with Va cup sugar or use drained canned fruit. Place fruit on top of batter and cover with % cup water or fruit Juice. Bake at 350 degrees for 40 to 45 minutes. BLUEBERRY DESSERT 1 8 oz. pack cream cheese 2 envelopes Dream Whip or Lucky Whip Ms cup 10X sugar 1 teaspoon vanilla 1 cup milk Beat all of the above together for the white mu, 1 packet plus 6 graham crackers Vz cup melted butter or margarine 1 cup sifted 10X sugar +1 can blueberry pie filling Crush crackers and mix with next two ingredients. Using a 9 x 13 inch dish, put % crumbs in the dish, then ¥t white mix then all pie filling on top. Add other half white mix on top, then remaining crumbs on top. Keep refrigerated. , +you can use other pie fillings such as cherry.
