Whey Animals may “lick” the problem of what to do with excess whey, according to U. S. Department of Agriculture (USDA) scientists. Whey, a liquid byproduct of cheesemaking, has many uses in foods and feeds, but the supply is greater than the demand. Scientists of USDA’s Agricultural Research Service (ARS) have now developed a method of making whey into lick blocks, similar to salt blocks. Calves placed on these blocks have used them to replace 20 to 25 percent of their normal feed ration. Made Into Animal Lick desalination of sea water. The whey is pumped through membranes that hold back most of the proteins. The permeate (the liquid that passes through the mem branes) contains lactose, salts, nonprotein nitrogen, vitamins and some protein residue. This permeate has a high potential for pollution, and thus cannot be safely disposed of in streams. Drying or otherwise treating it would be prohibitively expensive, so that ultrafiltration alone is not the full answer to the disposal of excess whey. To take full advantage of the nutritional value of the whey permeate, the ARS scientists have developed lick docks as an animal feed supplement. POWER TOOLS Lancaster Farming, Saturday, Mar. 16,1974—51 A method of making the blocks was worked out by Robert E. Hargrove, Frank E. McDonough and Dr. John A. Alford, research chemists at the ARS Nutrition In stitute in Beltsville. They pasteurize whey that has been deproteinized by ultrafiltration, evaporate it, then pour it into cheese molds for crystallization of the lactose and solidification. The equip ment needed for this process is either on hand in cheese plants or readily obtainable. In the course of the evaporation, nitrogen can be supplied in the form of ammonia or urea. If the blocks are made from cot- tage cheese whey, the am monia will have the ad ditional advantage of neutralizing the high acidity. Other ingredients to further enhance the nutritional qualities of the lick blocks such as minerals and animal or vegetable protein-can be introduced during evaporation. Flavoring materials, such as molasses, can be added to increase the blocks’ palatability to the animals. Experimental lick blocks were placed in the stalls of calves feeding on a low protein pelletized ration. Given the option of sup plementing their diet with Uck blocks, the calves each consumed a 45-pound block in one to two weeks, depending on the type of block. Those that were neutralized with ammonia disappeared twice as fast as the acid blocks. ARS animal nutritionist G. Paul Lynch, using calves from the Beltsville herd, kept records on the intake and weight gains of the animals. The lick block is only one form in which the permeate from whey treated by ultrafiltration can be used as animal feed. After evaporation and solid fication it can be crushed and dry blended with other feed, or it can be pelleted. This development may provide cheesemakers with a useful, perhaps profitable, outlet for their excess whey.
