—Lancaster Farming, Saturday, October 20, 1973 30 USDA Rejects Petitions For More Fat In Beef Sausages The U. S. Department of Agriculture last week turned down several petitions from manufacturers of beef sausages to raise the maximum fat content of their products from the present 30 percent limit to 50 percent. USDA’s Animal and Plant Health Inspection Service (APHIS) said standards for beef sausages-announced on Oct 3, 1970-mcluded a maximum fat limit of 30 percent. Shortly thereafter, APHIS officials said, several manufacturers of the product and a west coast trade association asked USDA to raise the fat limit on beef sausages to 50 percent. They contended the 30 percent fat limit unfavorably affected the taste and texture of the proudct and, therefore, adversely af fected its appeal to consumers, and that beef sausage should have the same fat limits as other comparable breakfast meat items, including pork sausage, APHIS officials said. Larry Hollinger the term “beef sausage” to be used in the labeling of ex cessively fat ground beef products that should be identified as “imitation hamburger.” -- The term “breakfast sausage” is familiar to con sumers through long time usage with ground meat products prepared as sausage and with significant proportions of fat. It also could be used to identify a “fresh” (uncured) sausage made from ground beef that contains more than 30 percent fat.
