- » I I 32—Lancaster Farming, Saturday, June 9, 1973 Chemicals In Meat Diets Greatly Overemphasized Danger to health from chemical residues found in humans as a result of eating meat and meat products has been greatly overemphasized, says Dr. John D Sink, professor of meat science at The Penn sylvania State University. Levels of such residues m today’s inspected meat products are not injurious to human health, Dr Sink affirmed recently on the basis of current research He described results of Federal programs for monitoring pesticide residues m human food and animal feed. In a Federal analysis of pesticide residues in meat samples, for example, no traces of chemicals were found for organophosphate in secticides, herbicides, or car bamates Studies by the Food and Drug Administration (FDA) and the U. S Department of Agriculture have determined that the extent and amount of residues from the five most prevalent chlorinated pesticides are generally 10 times lower than the maximum per mitted by the FDA. Public concern has been expressed regarding such hormones fed to livestock with the evidence of side effects from synthetic hormones used as contraceptives for humans.
