—Lancaster Farming Saturday, May 5, 1973 34 USDA Report Milk Package Report on milk packaging issued last week shows a con tinuing trend away from glass bottles to use of paper and plastic milk containers, and from small to larger milk containers, with further declines in home deliveries of milk and in whole milk as compared to skim milk items. The report shows the method of distribution, kinds and quan- Guidelines For Buying Pork The pork you buy will be stamped with the symbols of Federal meat inspection. This symbol has nothing to do with quality, but is your assurance that the pork is from a healthy animal, was processed under sanitary conditions, was suitable to eat when it left the plant and carries no misleading names or statements. The code number on the stamp shows the name of the plant that slaughtered or processed the meat. Government grades have not been established for pork as they have for beef, lamb and veal because pork does not vary in tenderness and flavor as much as other red meats. Hogs are bred solely for meat and are marketed young so the meat is usually well flavored and tender. Carol Rothermel, Chester County Extension home economist, explains that the large round stamp is the slaughtering floor label. It’s placed on wholesale cuts at the time the animal is slaughtered. For that reason, this stamp may not occur on all cuts of meat you buy. It does appear on whole fresh or cured hams and picnics slaughtered in Federally in spected plants. The small round inspection label is found on meats processed in plants that have Federal inspection in their processing rooms. You’ll see this label on cured hams and picnics. Cured hams and picnics may bear both the slaughtering floor inspection label and the processor’s in spection label Mrs. Rothermel says that canned pork products and sausages shipped in interstate commerce must be Federally inspected. This includes approval of formulas for all sausages as well as labels used on canned, processed and packaged pork. The inspection stamp is printed on the label.
