<? Dry Beans Offer Potential for Profit A shortage of dry beans used by food processors offers a marketing opportunity for Pennsylvania farmers, ac cording to Secretary Jim McHale of the Pennsylvania Department of Agriculture. Products featuring kidney, pea and similar dry beans are widely used by state food processors in a variety of canned products,' in cluding baked beans and bean salads. “Our processors tell me the shortage of dry beans probably will continue for several years, unless we can develop a source of supply here at home,” McHale said. In recent years, processors have been obtaining their dry beans from other states because of a lack of supply in Penn- sylvania. However, interviews conducted by the Bureau of Markets reveal most Penn sylvania processors would prefer buying state-grown beans if available. One reason is in creasing freight rates. Some state processors have been experimenting with growing dry beans near their plants. “Results have been promising, ’’McHale said, “but work needs to be done on developing varieties better suited to Pennsylvania, as well as solving storage and drying problems.” Additional information is avialable from the Bureau of Markets, Pennsylvania Department of Agriculture, Harrisburg. , Mercury Is Recycled On Collegian’s Tip The mercury in mercury batteries is being recycled as a direct result of a Florida university student’s sugges tion to Standard Oil Company of New Jersey.
