Sirloin Steak Good Buy If you’re buying steak for your family, a sirloin may be your best bargain. A good one will serve four or five people and costs a little less per pound than those from the short loin. These thick tender steaks may contain either a wedge bone, pin bone, or a long flat bone. Usually sirloin with the long flat bone is slightly more tender. But the others have less bone. When buying any sirloin steak, allow one-half pound per person for generous servings. Steaks from the short loin are also juicy and tender, but may cost slightly more per pound. These steaks include the porterhouse, T-bone and club The porterhouse contains a large section of the tenderloin while the T-bone has a smaller section Both have the familiar T-shaped bone. The club steak is similar to the porterhouse and T-bone, but lacks the tenderloin portion. For generous servings of any of these, buy a three-fourths to one pound steak per person 12.1972 25 Doris Thomas
