Dry Milk Is Praised The American dry milk in dustry was praised recently by Assistant Secretary of Agricul ture Richard Lyng for its suc cess in adapting to economic change and the needs of con sumers “The increased use of nonfat dry milk over the past 20 years is the result of improvements in quality and merchandising as well as of a greater consumer awareness of the value of dry milk in providing protein, vita mins and minerals,” Lyng says. “Consumers know this is a great food product” Lyng pointed out that most dry milk is used for further food processing, but the propor tion sold packaged for home use has risen sharply in recent years and the Department of Agriculture used nearly 139 mil lion pounds of dry milk in fis cal year 1970 in its Commodity Distribution Program for schools, needy families and in stitutions All of this milk is now forti fied with vitamins A and D and three-fourths of it is now m stantized.
