The new ndes provide that hamburger, and similar prod ucts of any other name, may contain no more than 30 per cent total fat. In the pad, as much os SO per cent fat was permissible, according to Delmar K. Myers, director of the department’s Bureau of Foods and Chemistry. The rules also ban, as they did in the past, the use of preservatives, coloring, meat by-products and filler, such as bread or crackers. Ground or chopped beef from tr specific portion of-the carcass may contain no added fat and toM fit may not ex ceed 20 per Cent, Myers said. The label also must identify the specific cut, such as “ground itoudd,” or “ground chuck.” Another section, of the re vised' rules pertains to smoked products, such -as ham, fpork 'and bacon. The finished prod uct may not exceed the weight of the fresh uncured meat, ac cording to i new regulation that limits or, controls the use of moisture in the curing process/Myers said.
