FRESH PEACH CRUMBLE IVz cups sifted flour 14 teaspoon salt Vz teaspoon cinnamon Vt tespoon nutmeg Vt cup sugar Vs cup butter or margarine Fruit Filling 4 cups fresh peaches, sliced J ,3 cup sugar Vz teaspoon lemon rind Sift flour with salt, spices and sugar. Cut butter or margarine into mixture until fine. Sprinkle half of flour mixture over bottom of 8 x 8 x 2 pan. Sugar peach slices; spnnkle with lemon rind Spread over mix. Cover fruit with balance of mix, patting down so it slacks to fruit. Bake in hot oven (400 degrees) 45 minutes. Peel and cut the peaches into eighths and fill the ciust. Cover with the balance of the sugar and dot with the but ter. Add the cinamon and almond extract. Bake at 450 degrees for 15 minutes, then 350 degrees for 30 minutes longer or until peaches are soft and a rich syrup has form ed. * * PEACH PUDDING 8 peaches 4 tablespoons shortening % cup sugar 1 e s§ V>Ja cups sifted all-purpose flour 3 teaspoons baking powder V 2 teaspoon salt 3 4 cup milk 1 teaspoon vanilla % teaspoon bitter almond Cream shortening and sugar to gether. Blend in well-beaten egg. Stir in flour, baking powder and salt, -sifted together, alternately with milk; then add the flavoring. Butter a baking dish 6Vz x 2 x 10 inches.
