Chicken Barbecue Business Booming It’s barbecued chicken season again when tons and ton of Lan caster County broilers will be served from charcoal pits under tasty barbecue sauce. Reviewing the past season; a representative of- one Lancaster County chicken barbecuing firm reports last year they served 43,- 000 halves or 26.87 tons in Lancaster, York and Chester counties. Biggest event served by Jacob C. Hess, Gordonville, and his crew, was 7,000 at the Coun ty Poultry barbecue in Lititz last year. Preferred are broilers two and one-half to two and three-quart ers pounds, which may be split and cooked on special quantity size equipment. Chicken barbe cues have given one of the big gest boosts' the industry has ever known.
