As the season has arrived wheu curing meat is in order, we republish as of old, our famous receipt for curing beef, pork, uiuiwu.uam., ., -..- - . Let these bd boiled together until all the dirt from the sugar rises to the top and is skimmed off. Then throw it into a tab to cool, and when cold pour it over your beef or pork. Tho meat must be well covered with piekle, and should not be put down for at least two days after killing, during which time it should bo slightly sprinkled with powder ed saltpetre, which removes all tho surface blood. &c., leaving the meat fresh and clean. Some omit boiling the pickle, and find it to answer well, though tho opera tion of boiling purifies tho pickle by throw ing off the dirt always to bo found in salt and sugar. If this receipt is strictly fol lowed, it will require only a single trial to nrove its suDcrioritv over the common way or most ways of putting down meat, and will rot soon bo abandoned for any other. The meat is unsurpassed for sweetness, delicacy and freshness of color. Look to the Implements. We desire, at this season of the year, to say that it is a lamentable fact that many farmers loso as much from a want of proper caro of implements and ma chinery an from tho actual wcar-and-tcar of tlieiu. Repeated wetting and drying injure, sooner or later, any kind of wood work ; the moisture getting into the cracks miuu begins the work of decay. This may be prevented by the timely and occasional application of some cheap paiut. Much has been said and written upon the value of tool-houses, and it is hardly necessary for us to add our mite to the general array ; but providing a tool-house is not all that should bo done, if the shovels, spades and forks are brought into it with tho dirt sticking to them, and in that con dition are allowed to remain through the winter, or until thcyaro again needed. All practical farmers know how much bet ter a bright plow turns the furrow, how much easier it is on tho team and driver, and yet they will bring their plows and harrows in every fall with tho dirt thick upon them, and let them be so until again wanted, entailing a great deal of injury. There aro various mixtures which might bo applied to tho iron to prevent rusting, tho cheapest of which is common (uusalt ed) grease. A better articlo may be found by melting together six pounds of llesh (not salted) lard and two of rosin. An old iron pot is a good thing to keep aud com pound tho mixture in. As soon as a tool is done bainir used for the season, clean it off aud give it a coat of this mixture, and aud oven if it remains undisturbed for years, it will come out as bright as when put a way. Implements properly cared for will not only last nearly twice as long as wheu this is not tho case, but, as wo said bcioio, they aro far better iu every way. Preserving Harden Flowers. The time has como when wo shall have to part with many garden pets which have given us so much pleasure during the growing season. Such partings always bring regret ; aud iu spite of " nowhere to keep them," people will try if something cauuot be done at anyrate. It is believed that it is not so much tho degree of cold which kills usually hardy plants, as it is the drying iullucuccs of a very cold at mosphere, aud henco many lind a very little coveriug sufficient to save plants, if tho covering bo such as to keep them from drying out. Yo know, for instanco, that a raspberry or a grapo viue, which would probably bo destroyed if left above ground iu its natural way, can be safely preserved by being buiied just beneath the surface ; auJ it is fouud that roses bent over to tho ground and covered with earth, so shaped as to throw off the water, will euab!o rather tender kinds to get through the winter unscathed. A friend onco told us that verbenas were much hardier than people supposed, lie put dry leaves over tho bod and then covered tho leaves with a board, aud they did not injure by tho hardest frost. We should suppose, however, that green succulent matter would rot by couliuo moat, as well as hard wood get injured by frost ; and we would suggest to all who may bo disposed to preserve anythiug in this way tho importance of cutting away half-ripo wood or succulent green foliage bnloro entombing tho plants for winter. Pampas grasses, tueostiich leather-like spikes of which aro so commonly seen in gardens, cause much discusaiou as to the best means to protect. Some take them up aud put them into a tub of earth and keep them in a cool cellar ; but those who succeed in keeping them over winter in the open ground have fiuor plants and larger and more numerous spikes. Some of our neighbors turn a barrel over the stocks to keep out tho water, filling in dry leaves all about tho plant ; and though some times the plants will bo lost Ueated in tins way, goaora'.Iy it is a success. The ' rocket" plant does well on cither of tho plans named for tho pampas grass. Dahlias, tubercses, gladiolus and Mioh like summer ilowcring roots, there is no troublo with. All they require is to bo taken tip as soon as Iho first frost has in jured their .lowers and spoiled their blos soming for the season, and after drying a little put them in some moderate cool and dry place secure from tho frost. The Sngar-Beet. The department of agriculture at Was.li iugton appears to have ascertained that tho piizcs of money offered by the depart ment to stimulate the production of tho sugar-beet aud Chincso sorghum In this country were made without authority from Congress and wore therefore illegal. Payments have, therefore, been suspended for tho present, and in all probability the matter will ba acted upon at the ensuing session of Congress aud favorably. We do not ourselves entertain any high ex pectations of valuable results being likely to be reached by stimulants of that sort. Still, wc always regard with favor any and all efforts made by the department of agriculture to encourage the production of saccharine crops iu tho United States As regards tho sugar-beet, it is rather a reproach upon tho enter prise of Northern agriculture tliat the Mormon colony in tho territory of Utah, under the rigorous despotism of IJiigliani Young, succeeded in produciug its own supply of domestic sugar from the beet 20 years in advance of any successful effort iu the same way in any of the Atlantic states, This was done before the opening of the Pacific railroad, and at a timo when the Mormon prophet was despotically bent upon making the Mormon e immunity en tirely independent and self sustaining. Tho example thus set has sines bsca slowly imitated by voluntary enterprise iu tho states of Delaware, New Jersey, In diana, Illinois and Maine, with irregular aud varying results. Perhaps tho case would have been different but for the unfortunate attempt of tho depart ment of agriculture to force a sudden do velopment of the sugar production on an immense scale by means of a rapid and widespread cultivation of the Chinese sor ithura, which pioved a lamentable failure. Since that date tho department has given encouragement to efforts at sugar making from Indian corn and other crops, the general effect of which has been to wrnkcu tho culture of the sugar beet and of the Omit I lie potash unless von can obtain tit purejirticio, vv bclfevcall druggi-di keep ii. tropical sugar cane, respecting the saccha rine properties of which staples there has never been any doubt whatever. Our own judgment is that if the attention of the country as regards sugar making could be concentrated upon those two crops the one for the Gnlf states and the other for the North and "West the result would be far more gratifying than could possibly be attained in any other way.
