LANCASTER DAILY BfTELLIGENCER, THURSDAY, JUNE 23, 1881. Lancaster Intelligencer. THURSDAY EVENING, JUNE 23, 188:. Receipt fer Making Currant Wine. The currants should be. fully ripe when picked ; put them into a large tub, in which they should remain a day or two, then crush with the hands, unless you have a small patent wine press in which they should net be pressed tee much, or the stems will be bruised and impart a disagreeable taste te the juice. If the hands arc used, put the crushed fruit after the juice has been poured off, in a cleMi or sack and press out the juice. Put the juice back into the tub after re moving any stems, skins or seeds remain ing, where it should be left about three days, until the first stage of fermentation is ever, and removing enci or twice a day .the scum copiously arising te the top. Then before putting the juice in a vessel a demijohn, keg or barrel any size te suit the quantity made : Te each quart of juice add Three pounds of the best yellow sugar, And soft water sufficient te make a gal lon. Thus, ten quarts of juice and thirty pounds of sugar will give you ten gallons of wine, and se en in that proportion. These who de net like street wine can re duce the quantity of sugar te 2J ; or who wisli it very sweet, raise it te 3 pounds per gallon. Tiic vessel must be full, and the bung or h topper left off until fermentation ceases which will be in twelve or fifteen days, meanwhile the cask must be filled up daily with currant juice left ever, as fer mentatien throws oil the nupure matter. When fermentation ceases rack the tvine off carefully, cither from the spigot or by the syphen, and keep running all the time. Cleanse the cask thoroughly with boiling water, then return the wine, bung up tightly and let stand four or five months, when it will be lit te drink, aud can be bottled if desired. All these vessels, casks, &c., should be perfectly sweet, and the whele operation should bo'dene with an eye te cleanliness. In such event, every drop of brandy or ether spiiitueus liquor added will do de tract from the flavor of the wine, aud will net in the least degree- increase its keeping qualities. Currant wine made in this way will keep for an age. Summer Grape-Pruning. Gcrmmitewn Telegraph. About this, as in nearly every ether herticiiltur.il subject, there is a consider able difference of opinion. We have known' vines te be " pruned te death " in follow ing out some wild theory that seme addle headed fellow had 'started, while ethers would prune se sparingly as te be of no benefit at all. Many strip the vines of three-fourths their leaves te allow the sun and air te get in, as they say, while ethers allow the grapes te be smothered for want of a judicious removal of the leaves. Pinching the cuds off the vines, or clip ping off a portion of the sprouts when they are growing rampantly, se far as it appears te be necessary te any reasonable judgment, will greatly benefit the crop, just as the reverse will damage it. The thinning-out of the surplus bunches, by re moving from a third te a half of them as they usually show them selves, is of the greatest importance. In doing this be sure always te remove the weakest and most imperfect. The Literals of the fruit-beariug branches, which have been pinched or clipped, will threw out mere branches, and these also should be pinched se as" te leave only a single leaf. The laterals en the canes, re member, are te be the fruit-bearing canes for next year, and should be allowed te grew unchecked. Care must be taken te tie up such af the branches containing bunches which are tee heavy te bear their own weight. There should, also, be no mere weed allowed te grew than is needed for the following year's fruiting. These simple general hints may be of service te these whose knowledge of grape growing is limited. In a Iittle while a few years of experience, which can be greatly aided by examining 1 he way that geed grape growers fellow will seen put one in the plain read te success. Drying Cherries. Cherries intended te be dried must first be stoned, spread en fiat dishes and dry them in the sun or warm even ; pour whatever juice runs Irem them ever them, a little at a time ; stir them about that they may dry evenly. When perfectly dry line boxes or jars witli while paper ami pack elose in layers ; strew a Iittle breirti sugar and fold the top of the paper ever them and keep in a dry sweet place. m m A Triangular Campaign. Additional iutcrcst will be imparted le the coming political campaign in Virginia by the action of the Republican state cen tral committee at Richmond yesterday, which, by an almost unanimous vote, de termined te held a convention en the 2-lth of August te nominate a full straight Re publican state ticket. This precipitates a triangular contest in Virginia,as the ltcad justers have already placid their ticket in the field, aud the Democrats are new en gaged in cheesing delegates te their nomi nating convention, which meets at Rich mond en the 4th of August. Cel. Cameren the Kcadjustcr nominee for governor, pro poses t e open the canvass in the valley early in August, whilst Mr. Jehn S. Wise, an other prominent Rcadjustcr, will commence a canvass of the tide-water counties, be ginning with Accemaa next week. Al though the regular Democratic organiza tion deemed it expedient te postpeno their convention until the first of August, and consequently an active prosecution of the campaign until a little later, the leaders are net idle, but arc quietly and effective ly organizing their forces, having learned these tactics from the Kcadjustcr leader, Gen. Mahenc. All of the prominent Re publican leader; in the state except United States Marshal Jehn F. Lewis (who is the Ilcadjuster nominee for lieutcnaiit governor,) seem te be out spoken in behalf of a straighteut ticket, and uudcr the leadership of General Wickham, Congressmen Dczcnderf and Jorgcnsen, Majer Yest, of the Staunton Virginian, Capt. Jehn F. Wilsen, post master at Lynchburg, and ethers, the Re publicans will doubtless present a compact force, leaving Gcu. Mahone te recruit his supporters, with the exception of a few stragglers here and there, from the Dem ocratic ranks. What success is premised him iu this direction it is perhaps tee early te judge, but if the recent local elections in Virginia, where almost every Readjuster nominee for the clerkships was defeated, can be taken as an indication, it would seem that Gen. Mahenc has quite as hard a task before him as he had when hu at tempted te threw the election of officers of the United States senate into the bauds of the Republicans an effort iu which he ignominiously failed. A Great Musical Event. In nothing is the United States making mere rapid development than iu music, and no organization has perhaps contribu ted mere te this gratifying fact than the North American Samgcrbuud, whose twenty second biennial festival commences in Chicago, June 29, and will conclude July 8. The festival committee is deter mined te give leaders te the grand choruses and grand eicucstra in the persons of the most celebrated artists of the United States and Germany, and hence are ena bled te announce as soloists such artists as Mmc. Reschka Lsutncr, Emma Deualdi, Anne Louise Carey, Win. Caudidus, My My eon T. Whitney aud Frauz Rcmmcrlz, the latter of whom se distinguished him self at the recent performances by the Baltimore Oratorio society. The male chorus will consist of 1,200 and the mixed chorus of 800 voices, whilst the orchestra will Imj composed of 150 of the best mu sicians of this country. The festival will take place in the concert hall of the expo sition building, which, in spite of its colos sal dimensions it contains, besides the large amphitheatre built for orchestra and singers, and seating 1,500 of the lat ter, 8,800 scats in the parquettc aud gal lerieshas shown itseff te be excellently adapted te its purpose, andef superior acoustic quality. Excellent quarters at the leading hotels have been provided for the visiting .musical organizations, aud Chicago will doubtless put her best feet foremost iu order properly te advertise herself through thisgrcat musical event.
