Then, all you need is some fresh vegetables to serve as ensp mb blers or a tossed salad, and your outdoor meal is completed! Corn is in season now and here is a recipe for corn pudding that is just a bit different. It includes the use of green pepper, onion, and more seasonings than usual for added flavor. A white sauce combined with the eggs and other ingredients will help the com to stay scattered throughout, rather than sinking to the bottom of the dish, as sometimes happens. The use of tender corn, cut and scraped from the cob, is desirable CORN CASSEROLE 2 tablespoons butter 2 tablespoons flour 1 teaspoon salt V+ teaspoon paprika V* teaspoon dry mustard 1 cup milk 2 eggs 2 cups uncooked corn V* cup green pepper 2 tablespoons minced onion l k cup buttered crumbs Make a white sauce of the first six ingredients. Add beaten eggs, corn, green pepper and onion. Pour into a greased baking dish set in a pan of hot water and bake in a medium oven, 325 degrees, for 45 minutes The last 15 minu tes, cover the top with crumbs buttered in one tablespoon of but ter. Suggested menu- Fried chicken, green lima beans, corn casserole cabbage slaw, biscuits, butter and, watermelon. STORING POTATOES AND ONIONS If you want to store potatoes and onions for the fall and winter months, be sure they are stored in a cool, dry and well ventilated room. Place vegetables in shallow layers, to allow fresh-air circula tion; you may even hang the onions from the ceiling. Make sure potatoes and onions are dry before storing them, it takes about a week to dry onions properly; potatoes can dry in a couple of days. Both vegetables should be mature before harvest ing; the tops should be almost dead on the potatoes; the onion blades should have been broken at the neck prior to harvesting. Potatoes and onions harvested in July generally have poor keep ing qualities Temperature, hu nudity and air circulation are the three most vital factors in stor ing. 't < Peaches are plentiful this year so housewives can experiment with dessert and salad combina tions. But a favorite the family never tires of is old-fashioned peach shortcake. A rich biscuit, dough is recommended for the shortcake, as it makes a pleasing combination with the sweetened fruit. PEACH SHORTCAKE 2 cups sifted flour 3 teaspons baking powder % teaspoon salt 2 tablespoons sugar 6 tablespoons butter or other fat % cup milk Sweetened peaches Sift together the dry ingredi ents, then cut m the fat. Make a well in the center of the mixture and add the milk slowly, stirring to make a soft dough. Turn on a lightly floured board and pat to. -inch thickness. Cut in large rounds buttering half of them, then top with unbuttered rounds. Bake in a hot oven, 425 degrees for 15 minutes.
