The housekeeper who 1ms no business
imblts makes but a poor appearance
beside one who hns them. The latter
has a fixed hour and day for every
domestic duty; the former has things
done when she thinks of It. The one
replenishes before an article is exhaust
ed; the other runs around and borrows.
The one knows just how long an article
ought to last ; the other is robbed before
her face and eyes. The one makes her
rags pay for her tins, her grease pay for
her soap; the other has to give ready
money for both these commodities. The
one has her house cleaning done in
May ; with the other it dangles Into
July. The one can see visitors at almost
any hour of the day, the other has to
hurry skurry to make herself presenta
ble. The one has always something
toothsome to reserve if an unexpected
guest must be asked to tea ; the other
has nothing but an apoloy. With the
one all goes smoothly, noiselessly, pleas
antly, and she has a smiling face ; with
the other the jar is always evident, the
house, its mistress and its servants are
always in a snarl. The one has business
habits ; the other no habits at all.
About Boiling Eggs.
There is an objection to the common
way of boiling eggs which people do
not understand. It is this: The white
under three minutes' rapid cooking,
becomes tough and indigestible, while
the yolk is left out. When properly
cooked, eggs are done evenly through
like any other food. This result may
be obtained by putting the eggs Into a
dish with a cover, as a tin pall, and then
pouring upon them boiling water, two
quarts or more to a dozen eggs, and
cover and set them away from the stove
for 15 minutes. The heat of the water
cooks the eggs slowly and evenly and
sufficiently, and to a jelly-like consist
ency, leaving the center or yelk harder
than the white, and the egg tastes as
much richer and nicer as a fresh egg is
nicer than a stale egg, and no person
will want to eat them boiled after trying
this method once.
Heating Cans.
A lady writes as follows: "I've learn
ed this summer that a good many intel
ligent, stirring housewives heat their
cans before putting hot fruit in them to
prevent breaking. That's the good 'old
fashioned way,' I know, but a later and
better way is to wring a cloth out of
water (cold or hot,) fold it two or three
thicknesses, set the can on the wet cloth
firmly, let the hot fruit hit the bottom
of the can first. There Isn't any danger
of their breaking,and it is much handier
than the old way. If I've only one can
to fill I set it on my wet dishcloth. I
wish those that have never tried this
method would do so, even if they feel
like my mother did the first one she
tried. 'Well, I'll try it, but 1 know it
will break.' "
Sowing Oats and Wheat Together.
The experiment has been tried in
Iowa of sowing in the Fall, upon one
acre of land, two bushels of wheat mixed
with one bushel of oats. The oats shot
up rapidly, and were of course killed
down by the frost. But they furnished
a warm covering for the earth, and
when the snow fell among the thick
stalks and leaves they kept it from
blowing away. This covering prevents
the winter-killing of the wheat, and the
rotting oat leaves and stalks afford a
rich top dressing for the crop the iollow
ing Spring. The result was an abun
dant yield of wheat, while land precisely
similar along side of it, and treated in
the same manner, with the exception of
omitting the oats, was utterly worthless.
g" A farmer says : " Four years ago
my farm was fearfully infested with
rats. They were so numerous that I
had great fears of my whole crop being
destroyed by them after it was housed;
but having two acres of wild pepper
mint that grew In a field of wheat, cut
and bound with the wheat drove the
rata from my premises. I have not
been troubled with them since, while
my neighbors have any quantity of
them. I feel convinced that any person
who is troubled with these pests could
easily get rid of them by. gathering a
good supply of mint and placing it
around the walls of the base of their
bams."
