Probably, remembering how the cereal graltunoweommonly called '"mummy wheat" was raised out of a few grains found In a mummy case .from Egypt, the saclety In question dealt in like niauner with some grains received from Japan. There is very little spring sow. ing of wheat in France, and the usually uncertain weather which prevails in October and November is a drawback upon all ordinary agricultural opera tions, often forcing the farmers to sow the Inferior "spring" or "summer" wheat whsn he lias been unatile pre viously to prepare the ground for the more desirable "winter" (variety. A resident in Japan, however, communi cated to one of the Purls Acclimation Society In Paris, that Japanese wheat, planted lu April or May, is ripe and ready for the sickle or the reaping ma chine as early, at least, as European .grown wheat sown some five or six months earlier, and that the yield is gually large with that produced from any of the varieties of European wheat. Thus additional time for ploughing and preparing' theilaud.il u the good weutlier of spring is gained. The laud must benefit by lying fallow for three or four mouths longer then would otherwise be the case, and the laborers might be employed on other farm work. Wheat ihxt would flourish in Japan might also be cultivated In Europe from li.e Med iterranean to the Nortli of Hcotlumi, or from Texas to the Canadian frontier, whloh are in much the same degree of north latitude. As yet, no particulars have been published by the Acclimation Society as to whether this "Japanese wheat" is a new variety, or simply European or Amerlcau grain with new characteristics developed by any peculiar ity In the soil,cIimateiid position of the locality from which was supplied the particular specimen experimented upon. Value of the Dairy Product. Times are wonderfully changed since tbe simple days when our farmers de pended on their own dairies for their families supplies of butter and cheese, or, perchance, drew a limited income from the overplus which found a ready market among the neighbors. It was peculiarly a home industry, with little thought of ever becoming a national importance, even surpassing in value tbe agricultural staples that make the kingdoms of Abe Old World our debtors. But so it has already become in the abort space of a single generation. In stead of single dairies, the farmers of a county now unite In contributing to the support of extensive cheese and butter factories. And, instead of merely providing for our borne consumption, our dairy products are now among our most valuable exports. It seems in cred ible, but the sober fact U stated that the combined value of our butter and cheese exports Is $30000,000. Wore than thatof the wheat crop, three times more than that of the oat crop, four times more than that of the potato crop, one seventh more than that of the hay crop, one-third more than that of the cotton crop, and but one-fifth less than that of the corn crop. Good butter and cheese are essentials to our dally meals. They have an additional value now that we see how essential they are to our na tional housekeeping. What Can be Done With Apples. Ten good size apples, the rind of half a lemon, six ounces powdered sugar, half pint milk, half pint of cream whip ped, two eggs. Peel, core, and cut the apples Into a sauccpaq with two table spoonfuls of water, the sugar, and minced lemon rind. Boll all together until quite tender and pulp the apples through a sieve j if they should not be quite sweet enough, add a little mora sugar and put them at the bottom of the dish to form a thick layer. Stir together the milk, cream and eggs, with a little sugar, over the fire, and let the mixture thicken; but do not allow it to reach the boiling point. When thick, take It off the Are; let it cool a little, then, pour It over the apples. Whip some cream with sugar, lemon juice, etc., the same as for other trifles ; heap it high over the custard, and the dish is ready for table.
