BEETS WITH ORANGE SAUCE 14 cup sugar % teaspoon salt 2 tablespoons cornstarch % cup orange juice 2 tablespoons lemon juice % teaspoon grated orange rind 1 tablespoon butter or mar- garine 23%, cups beets, cooked or canned, sliced drained Combine sugar, salt, and cornstarch; mix well. Stir in orange juice. Cook till thick- ened, stirring constantly. Re- move from heat. Stir in lem- on juice, orange rind, and fat. Pour sauce over beets and stir carefully. Heat and serve. Makes 6 servings. * # #* BAKED LIMA BEANS IN SOUR CREAM 2 cups large dry lima beans 5 cups water V4 cup butter or margarine, melted 1Y2 teaspoons brown sugar, packed 2 teaspoons salt 1%2 teaspoons dry mustard 2 teaspoons molasses 15 cup milk 3% teaspoon onion juice 15 cup sour cream Soak beans in water over- night. Boil gently until ten- der. Drain. Preheat to 350 degrees. Place beans in a 2- quart casserole. Combine re- maining i ngredients and pour over beans. Bake cover- (ed, about 1 hour. Makes six t servings. * * * CREAMED HAM AND CABBAGE 8 cups coarsely shredded = Tempting Vegetable Ways cabbage 1 cup boiling water 2 tablespoons butter margarine V4 cup flour 2 cups whole or skim milk 2 cups ham, cooked and diced V4 cup breadcrumbs, fine dry 1 tablespoon butter or melted Cook cabbage in boiling water, covered, 8 to 10 min- or utes, or until tender. Drain thoroughly. Melt fat and blend in flour. Stir in milk slowly. Cook until thickened, stirring constantly. Add cab- bage and ham to sauce and cook slowly until heated thorough. Mix breadcrumbs with fat & heat until crumbs are lightly browned. Top cabbage and ham with the crumbs just before serving. Makes 6 servings. * * * APPLE-GLAZED SWEET POTATOES 45 cup apple jelly 14 teaspoon cinnamon 15 teaspoon salt 6 sweetpotatoes, small whole, cooked or canned Melt apple jelly in a fry pan over low heat. Stir in cinnamon and salt. Add the sweetpotatoes. Cook over low heat, turning sweetpotatoes several times until they are well coated and most of jelly is absorbed — about 6 min- utes.
