Colorful Florida Seacoast Salad

October 1 through 21 is Fish 'n Seafood Parade time—time to
mix a colorful, refreshing salad that’s glamorous-looking but rela=
tively inexpensive to serve. Chilled fresh shrimp, green beans,
macaroni shells and pimiento combine with crisp celery and zesty
canned Florida grapefruit sections. (Of course, fresh Florida grape- | m
fruit is delicious to use, and it will appear soon in your market.) |=
The accompanying remoulade dressing contains frozen Florida :
grapefruit juice concentrate to give it extra pungency.
Florida Seacoast Salad
14 cup diced pimiento
. 1 package (10 ounces)
& frozen cut green beans,
thawed or 1 can (1
pound) cut green beans,
drained
115 cups sliced celery
3 cans (1 pound each)
8 Florida grapefruit sec= ~
¢ tions, drained and chilled
Salad greens
1 teaspoon salt
1, teaspoon dry mustard
1, cup salad oil
14 teaspoon Tabasco
1 can (6 ounces) frozen
Florida grapefruit juice
concentrate, thawed,
divided
2 pounds raw shrimp,
cooked and cleaned
2 cups cooked macaroni
shells (1 cup raw)
Combine salt, dry mustard, salad oil and Tabasco in bowl. Add
grapefruit juice concentrate reserving 2 tablespoons for Grape-
fruit Remoulade Dressing*, Add shrimp and refrigerate several
hours or overnight, stirring once or twice. Combine cooked mac-
aroni shells, pimiento, green beans and celery; mix well. Drain
seafood and add with grapefruit sections to macaroni mixture; toss
lightly. Serve over crisp greens with Grapefruit Remoulade
Dressing. YIELD: 8 servings.
*Grapefruit Remoulade Dressing
2 tablespoons frozen Florida
1, cup mayonnaise % grapefruit juice concentrate
1 hard-cooked egg, chopped (reserved from salad)
1; cup chili sauce 2 teaspoons horseradish
