“Hot salt” cured hams hang above the table in this picture of P. T.
Ziegler, meats curing authority at the Pennsylvania State University
Agricultural Experiment Station. The “hot salt” method, used by
some farmers to save time in pork curing, produced satisfactory ham
in experimental trials. However, Mr. Ziegler feels that it has nothing
to recommend it over usual methods explained in Extension Circular
239, available at county agents’ offices.
