Then throw it into a tub to cool, pour it over your beef or pork, to remain the usual time, say four to five weeks. The meat must be well covered with pickle, and should not be put down for at least two days after killing, during whieh titue it should be slightly sprinkled with pow. dared saltpetre, which removes all the ear face, blood, &0., leaving the meat fresh and clean. Some omit boiling the pickle, and find it to answer well; though the operation of boiling purifies the pickle by throwing off the dirt always to be found in salt and sugar. If this receipt is properly tried—it—will never be abandoned. There is none to sur pass it, if so good. GUNNING ACCIDENT..-011 last Saturday evening, two young man, Frederick Bushman and John Spidle, residing near Fayetteville, were out hunting. Mr. Bushman seeiog a rabbit ahead, aimed and fired at it, the con tents of his shot gun taking effect in Mr. Spidle's left arm, near the elbow. The young man was taken to his home by neighbors who were apprised of the occurrence, and Mr. Bushman summoned the Physieian, Dr Hartzell, who probed the wounds, and extri cated the shot.
