Although Joy Wojtowicz enjoys
preparing various entrees and
salads, working full time, taking
care of a home and three children,
does not allow her much time to
spend in the kitchen so she collects
recipes that are both nourishing and
easy to prepare.
When possible, she likes to pre-
pare recipes she can do in advance
and refrigerate until she gets home
and can either pop in the oven or
serve cold from the refrigerator.
She especially enjoys making spa-
ghetti sauce and although not of
Italian descent, Joy makes her spa-
ghetti sauce from an old Italian
recipe.
It takes hours of preparation and
.more hours of cooking. so when Joy
makes it she does it in large quanti-
ties and freezes it in containers until
she is ready to use some of it.
The former Joy Harris, daughter
of Liva Harris and the late Ralph
Harris, Joy is a native of the Back
Mountain. She has two daughters,
Rachelle and Kara. both students at
Dallas, and John, a student at West
Side Vo-Tech School.
When she has the time, Joy enjoys
reading best sellers, and, also likes
to crochet. Since her children are
involved in school activities and
Back Mountain sports program she
is also kept busy transporting them
to and from their various events.
Kara is a member of the cheerlead-
‘ing squad for the Dallas Cowboys in
the Mini-football League.
Joy is an avid animal lover and
has two dogs. Keeshund and a
three rabbits.

ing but since Joy is working full
time. her work plus her children’s
activities make it impossible.
The recipes she shares with this
readers are
favorites of the family, particularly
her children. The Garlic Chicken
makes a delicious one-dish meal
and served with a tossed salad and
light dessert also an ideal dinner
when entertaining. The Scalloped
Potates are easy to prepare and are
perfect to serve with baked or
broiled ham, meat loaf or roast
chicken.
Both the Watergate Salad or the
Banana Salad are tasty and are
recommended for entertaining
friends or for a light dessert or
salad with a heavy dinner. If count-
ing calories, it is suggested that
non-dairy whip be substituted for
the heavy cream in the Banana
Salad since it is not as rich.
GARLIC CHICKEN
OVER RICE
2 1b. boneless chicken breasts
1 8-0z. can mushrooms
1 16-0z. can peas
Corn starch
Garlic powder
Salt & pepper to taste
Cut chicken breast into thin

Watome gon
garlic powder (to taste) until
tender. Drain mushrooms and save
juice: cook mushrooms with
chicken over low heat for about 10
minutes. Add two tablespoonsful of
cornstarch to mushroom juice. stir
then add to chicken to make a light
sauce. Stir till thickened. add peas
and simmer for 15 minutes. When
done, spoon over cooked rice and
serve. :
SCALLOPED POTATOES
6 1g. potatoes, washed & peeled
1 med. onion, sliced thin
2 cans cream of mushroom soup
ty ¢. milk
Butter
Slice washed and peeled potatoes
thin. In a casserole dish. layer
potatoes, slices of onion, two table-
spoons cream of mushroom soup. a
little milk and slightly sprinkle with
salt (optional) and pepper to taste.
Alternate layers until all of potatoes
are used. Top with-remaining soup
and milk. Cover and bake at 375
degrees for one and one-half hours.
or until potatoes are done.
WATERGATE SALAD
1 6-0z. pkg. pistachio instant pud-
ding
1 lg. can crushed pineapple
1, pkg. colored mini-marshmallows
1 med. container cool whip
1, ¢. chopped walnuts (optional)
In large mixing bowl, adding pud-
ding, drained pineapple (save
juice). marshmallows and cool
whip. Stir well. and add pineapple
juice (enough to make mixture
moist). Chill for one hour before
serving.
BANANA SALAD
6 fresh bananas
11g. can pineapple chunks
1 jar maraschino cherries
1 pt. heavy cream
In large chilled mixing bowl whip
the heavy cream, add sugar to
taste. Drain pineapple chunks and
cherries and add to whipped cream.
Peel bananas. slice into bowl, mix
well and sefve immediately. so
bananas do not discolor.
Patricia L. Repotski has been
named the Assistant Branch Man-
ager of Merchants Bank's Back
Mountain Office. The announcement
was made by Barry C. Boyer, Presi-
dent and Chief Operationg Officer.
A graduate of Dallas Senior High
School, Mrs. Repotski has received
her general banking diploma
through the American Institute of
Banking and has attended Luzerne
County Community College studying
accounting.
She began her banking career
with Merchants Bank North (form-
erly Wyoming National Bank) in
1967. Prior to her appointment as
Assistant Branch Manager, she
served as a teller and, in 1983, was
made loan servicing manager.
Mrs. Repotski is a member and
former director of the Wyoming
Valley American Institute of Bank-
ing and the Prince of Peace Episco-
pal Church, Dallas. She and her
husband, Michael, are the parents
of two children, Christopher and
Jennifer, and are residents of
Trucksville.

TO MANY, the recent wedding of
Prince Andrew of England and
Sarah Ferguson, the Duke and
Dutches of York, was an exciting
event. I enjoyed watching the
ceremony on television, seeing the
royal family, the happy couple and
the vast crowds. i
Preparing for a
royal wedding,
like any other,
must take lots of
thought and hard
work. Sarah
chose to have
young children as
her attendants
and I know there
is always some
concern as to how
the children will
behave.
son of Prince Charles and Lady
Diana, was one of the adorable
attendants. Known for his boyish
antics, he provided a few moments
of comic relief for the audiences
watching. For his mother, however,
I'm sure he caused some worry. As
the mother of a son who was in a
wedding at the age of three, I know
that the only thing Lady Diana
remembers about the wedding is
how her son behaved!
After all, royal motherhood is still
motherhood!

to the Orient.”’ Japanese fans,
candles and window murals, as well
as the delicious buffet catered by
Peking Chef Restaurant povided the
atmosphere for a lovely evening.

PLANS ARE BEING FINALIZED
for the ninth annual Auction of the
Wyoming Historical and Geological
Society. Set for Saturday, Sept. 13
on the grounds of the Swetland
Homestead, this year’s auction
items will include antiques,
collectibles and new merchandise.
Throughout the day a flea market,
bake sale and refreshments will be
available. ;
The auction will open at 10 a.m.
with bidding commencing at 11 a.m.
All proceeds will benefit the
Society which has existed since
1858.
If you would like to donate to the
auction, contact the Wyoming
Valley Historical and Geological
Society.

IT’S PROBABLY HAPPENED to
anyone who has ever iced a cake.
You make the icing, put in the
powdered sugar, stir, and realize
that the icing is the wrong
consistency, and you don’thave any
more powdered sugar. Not to worry,
I recenlty read that if you add
powedered milk to the icing, just to
bring it to the right consistency, it
will be fine. I tried it and it works
like a charm.

completing a four-hour seminar on
babysitting coordinated by Wilkes-
Barre General Hospital's
Volunteers.
This course familiarized the
youngsters with proper care of
children, household safety and
