Proper packing
If you're going to mail
any of your baked goodies,
remember that cakes are
best sent in the pans in
which they are baked. Pack
cookies in air-tight contain-
ers and use miniature
marshmallows to fill the
spaces. This keeps them
from breaking.
LEMON SUNSHINE
BREAD
1%; c. all-purpose flour
1% tsp. baking powder
Y, tsp. salt

1 Tbs. grated lemon
rind
Y2 c. softened butter
1 c. plus 2 Tbs. sugar
2 eggs
% c. milk
5 tsp. lemon juice
Preheat oven to 325 de-
grees. Very lightly grease
an 8x5-Inch loaf pan with
“SilverStone.”
In small bowl, combine
flour, baking powder, salt
and lemon rind; set aside.
In medium bowl, cream
butter and 1 ¢. sugar to-
gether until light and fluffy.
Add eggs, one at a time,
beating well after each addi-
tion. And flour mixture al-
ternately with milk, stirring
just until blended. Stir i in 3
tsp. lemon juice.
Pour batter into prepared
pan. Bake 1 hour 10 minutes
or until done. Cool in pan
on wire rack 10 minutes. Re-
move from pan.
In cup, combine the re-
maining 2 Tbs. sugar and 2
tsp. lemon juice. Brush over
top of bread; cool on wire;
rack. (
Makes 1 loaf.
