. When it comes to
cooking, nothing is more
enjoyable for Mary Siegel
than cooking for com-
pany. Entertaining
friends and family rates
high on her list of favorite
activities. An inventive
cook, Mary doesn’t relay
on cookbooks but often
makes up her own
recipes.
" Mary shares some
unique recipes with Post
readers. All sound
‘delicious and are appro-
priate for autumn. Curry-
Chutney Spread is an
appetizer spread that is
served with crackers.
Cream of Autumn Squash
Soup combines acorn and
butternut squash with
chicken stock, milk or
cream and spices for a
#2 hearty soup. In the
ipe for Salmon Quiche,
Mary provides a recipe
for whole wheat crust and
delicious filling made
from salmon, eggs, half 'n
half and shredded cheese.
Dilly Bread and Dill
Potato Salad. Dilly Bread
‘calls for the interesting
addition of creamed
cottage cheese. This
recipe makes one round
loaf. When Mary asked
her sisters what recipes to
include in the column,
their unanimous choice
was Dill Potato Salad. In
addtion to the flavor of
dill, a dressing made by
combining oil, vinegar
and sugar with mayon-
naise adds a special taste.
On Sunday, Oct. 3, the
Mountaintop Council 6440,
will host this year’s sixth
Annual Rosary Rally,
sponsored by the com-
bined Knights of
Columbus of Wyoming
Valley. Chairman for this
year’s event will be Bob
Perkins, Grand Knight of
the host council.
Participants will
assemble at St. Mary’s
Byzantine Church,
Chestnut
Kingston, at 2 p.m. The

The Siegels recently
moved to their home on
Huntsville-Idetown Road
from Wyoming Valley.
Prior to 1980, they lived in
Milwaukee, Wis. for eight
years.
Mary is originally from
swimming, Joanna takes
gymnastics at the YMCA.
The Siegels are members
of Gate of Heaven Church.
Mary, who works at
College Misericordia, is a
member of the Junior
League of Wilkes-Barre
and Leadership Wilkes-
Barre. Mary enjoys
traveling and has visited
Mexico, the Virgin
Islands, Canada, Europe
Dallas during her school
years. A graduate of Gate
of Heaven School, and
Marymount High School,
Tarrytown, N.Y., she
received her college
education at Marquette
University, Milwaukee,
Wis. and at the University
of Wisconsin where she
received. her degree in
education” psychology.
Her husband, Chip,
originally from Mil-
waukee, also graduated
from Marquette. Univer-
Pool Insurance Company,
Kingston.
The Siegels are parents
of three children,
Christopher, 12, seventh
grade student at Gate of
Heaven School; Joanna,
9, in fourth grade at Gate
of Heaven and year-old
Brock. Both Christopher
and Jhanna are sports

CURRY-CHUTNEY
SPREAD
1-8 oz. pkg. cream cheese
4 oz. shredded cheddar
cheese
2 t. curry powder
1 jar Major
chutney
chopped green onions
Grey’s
"Ritz or desired crackers
Soften cream cheese
and add cheddar. Mix
well; add curry powder.
Allow to stand at room
temperature for about an
hour to blend in curry.
Shape into a mound on a
serving platter. Pour a jar
of Major Grey’s chutney
over the cheese mixture.
Sprinkle generously with
chopped gree onions.
Serve with Ritz or other
plain crackers.
CREAM OF AUTUMN
SQUASH SOUP
1% 1b. butternut and
acorn squash combined
1 med. onion, coursely cut
1 bay leaf
Ys t. rosemary
1 qt. chicken stock
115 t. salt
Ys t. white pepper
1% c. milk
Do not peel squash. Cut
into large pieces, seed.
Place all ingredients
except milk in a large
saucepan. Bring to a boil
.and then reduce heat to a
simmer for 45 minutes-1
hour, or until vegetables
are soft. Strain and save

cooked onion in a blender.
: Mix puree with remaining
with the addition of milk
or ~créam and adjust
seasoning over simmer-
ing temperature. Serve.
SALMON QUICHE
1v4 c. flour (preferable
whole wheat)
Ys t. salt
% c. butter
Y c. cold water
1 egg white
Combine flour and salt.
Cut in butter with pastry
blender until mixture
resembles course
crumbs. Gradually add
water and mix with a fork
until blended. Line a
quiche pan or 9-inch pie
plate with pastry. Brush
with egg white.
1 c. canned salmon
% c¢. chopped onion
1%4 c. shredded Swiss or
Gruyere cheese, 5 oz.
4 eggs, slightly beaten
1 pt. half ’n half
dash salt
dash black pepper
dash cayenne
2 T. chopped parsley
Combine salmon, onion
and cheese. Place in
crust. Combine eggs, half
‘n half, salt, pepper, and
cayenne; pour over
cheese mixture. Sprinkle
with parsley. Bake at 375

DILLY BREAD
1 pkg. dry yeast or 1 cake
compressed yeast
4 c. water (warm for dry
yeast, lukewarm for cake
yeast)
1 c. creamed cottage
cheese, lukewarm
2 T. sugar
1 unbeaten egg
1'T. minced onion
1 T. butter
2 T. dill seed
1 t. salt
Vy t. baking soda
2Y4-2Y% c. flour
Soften yeast in water.
Combine in a mixing
bowl, cottage cheese,
sugar, onion, butter, dill
seed, salt, soda, egg and
softened yeast. Add flour
to form a stiff batter,
beating well after each
addition. Cover. Let rise
in a warm-place until light
“and doubled in size, 50-60
minutes. Stir down batter.
Turn into a well-greased
8’ round (1%-2 at.)
casserole. Let rise in a
warm place until light, 30-
40 minutes. Bake at 350
degrees for 40-50 minutes
or until golden brown.
Brush with soft butter and
sprinkle with salt. Makes
one round loaf. :
DILL POTATO SALAD
5 Ib. red potatoes
2 med. onions
3-4 stalks celery
3 T. dill weed
+1 ce. oil
Y% c. vinegar
Ys c. sugar
mayonnaise to taste
salt
pepper ;
Wash potatoes; cook
with skins on. Cut into
slices or cubes. Chop
celery and onion, add to :
potatoes. Add mayon-
naise to desired amount,
salt, pepper and dill.
Mix oil and vinegar with
sugar. Add to potatoes
and mayonnaise. Com-
bine until well mixed. Top
with more dill seed.
Note: Do not peel
potatoes.
