This week, once again,
Post readers have the
opportunity to experiment
with several of the recipes
Cookbook. Bev Bunney,
whose daughter, Andrea,
was a member of the
troop, is sharing the
recipes for Frosty Apricot
Salad, Snowy Mashed
Potato Casserole and
Lasagne with us.
Bev’s recipe for Frosty
Apricot Salad is really
something special.
Combining apricots and
crushed pineapple with
dpricot jello for the base,
the salad is topped with a
delicious frosty topping
made by combining
custard made with eggs,
sugar and pineapple juice
with thawed Cool Whip.
Brand-name
Cream cheese, sour
cream, chives, butter and
paprika flavor mashed
Potato Casserole. This is
a nice potato dish to
prepare when making a
roast, since. it can be
baked right along with the
meat.
Lasagne seems to be an
all around favorite and
Bev’s recipe is no 'ex-
ception. After simmering
the rich sauce for several
hours, layer mozzarella
cheese, ricotta cheese and
freshly grated Romano
cheese with lasagne
noodles and sauce. Add
garlic bread, salad and a
bottle of wine for a dinner
Bev says all these
recipes are really tried

She enjoys cooking and
baking, especially
desserts. Andrea also
likes to cook and in her
mom's words, “is really a
big help.”
Bev, her husband, John,
and their daughter live in
Meadowcrest Manor,
Chase. Both John and Bev
are graduates of Lake
Lehman High School.
Andrea will be a fourth
grade student at Lehman-
Jackson Elementary
School in September.
Bev, a graduate of
College Misericordia, has
been a teacher at the
Dallas Borough School for
12 years where she
teaches second grade.
John is an employee of
Proctor and Gamble,
Mehoopany.
The Bunneys are
members of the
Shavertown United
Methodist Church where
both John and Bev are
members of the Couples
Club. Bev is also a
member of the United
Methodist Women,
Priscillas Circle and
serves as chairman of the
commission of education.
She is also a member of
the Dallas Eastern Star.
Bev’s hobbies include
sewing and working - on
various crafts while John
enjoys working around
the house. The beautiful
fireplace in their home
reflects John’s ability.
Andrea, who takes art
lessons, enjoys drawing
and horseback riding.
Among the many
summertime activities
the Bunneys enjoyed this
year were their vacation
in Sea Isle City, a visit to
Sesame Place and a trip
to Lancaster with the
Brownie Troop

SALAD
1 16-o0z. pkg. apricot jello
1 15-0z. can peeled
apricots, sliced, reserve
juice
1 15-0z. can crushed
pineapple, | drained,
reserve juice
Dissolve gelatin ac-
cording to package
directions, using liquid
from apricots as part of
cold water. Add
remaining ingredients,
pour into 9x13 inch dish
but not firm.
In the meantime,
prepare Frosty Topping.

In this capacity Shields
will be responsible for
I c. sugar
3 T. flour
2 beaten eggs
1 c. pineapple juice
2 c. thawed Cool Whip
Combine sugar, flour
and eggs. Stir in
pineapple juice. Cook
Cool Whip. Spread over
salad, refrigerate until
firm.
SNOWY MASHED
POTATO CASSEROLE
4 1b. potatoes, boiled and
mashed
8 oz. cream cheese, room
temperature
1 ¢. sour cream
2 t. salt
Ys t. pepper
1 clove garlic, crushed
V4 c. chives
.1 T. butter
Y t. paprika
Add cream cheese, sour
cream, salt, pepper,
garlic, chives and butter
to the mashed potatoes.
Beat well and place in a 3-
quart casserole. Sprinkle

degrees for 30 minutes.
LASAGNE
1 lg. can tomato puree
2 cans tomato paste
2 c¢. water
1 t. oregano
1 t. sugar
add ground beef and salt.
1 t. salt
Ya t. pepper
2 T. olive oil
1 ¢. minced onion
1 clove garlic, crushed
1% Ib. ground beef
1 Ib; lasagne noodles
1 lb. mozzarella cheese
1 1b. ricotta cheese
Ys 1b. freshly grated
Romano cheese
In a large kettle,
combine tomato puree,
tomato paste, water,
oregano, sugar, salt and
pepper. Let simmer.
Meanwhile, heat olive oil
in a skillet until hot, add
minced onion and crushed
garlic and saute. When
onion is golden brown,

Cook until the meat has
lost its red color, then add
to the kettle mixture.
Simmer for about two
hours or until the sauce
looks thick.
Cook lasagne noodles as
directed on the package.
Drain thoroughly. Rinse
and separate noodles
spreading them on a towel
to dry. Cut the mozzarella
cheese into thin slices.
Spoon a layer of sauce
into the lasagne pan.
Layer alternately sauce,
noodles and cheeses. Top
with noodles ‘then sauce.
Bake in a 375 degree oven
for 30 minutes. Let stand
in a warm place for 15
minutes.
