PAGE SIX Post Cookbook BY JOAN KINGSBURY Does a vacation that includes visiting Sea World, Kings Island, Opreyland and Elvis Presley’s Graceland Manor sound exciting? Last summer Jan Carey, her husband, Ken, and their children spent two wonderful weeks camping and enjoying these in- teresting sites, Camping is a family hobby and al- though the Careys have taken many enjoyable vacations, last summer’s was the best according to Jan. A resident of Harveys Lake all her life, Jan is very involved in com- munity activities. She is president of the Lake- Noxen PTA, Den Mother for Pack 331, secretary of the Harveys Lake Little League and a member of the Long Range Planning Committee for School Improvement in the Lake- On Tuesday, her day off from working in the kitchen at the Carpenter’s Nursing Home in Idetown, Jan donates her time aiding in the kindergarten of Lake-Noxen School. Jan’s husband, Ken, a Pringle native, is road foreman of Harveys Lake Borough. The Careys have two children, Kevin, age 11 and Tiffany 7. Kevin, a sixth grade student at Lake-Noxen Elementary School, participates in the PTA Basketball League, is a Boy Scout and plays Little League baseball. Tiffany is a first grader at Lake- Noxen Elementary School. The Careys are members of the Alderson United Methodist Church where Ken teaches Sunday School. Naturally since Jan's job requires that she excel in the kitchen, Jan enjoys cooking. Her recipe for Bar-B-Q Spareribs calls for tabasco, Wor- cestershire sauce, dry mustard and lemon juice. These saucy ribs have a zesty flavor, having been simmered in a combina- tion of sherry and water before baking in the spicy sauce. Cabbage, Kielbosi and Sea Shells may sound like an unusual dish, but Jan says that the flavors blend deliciously. When Jan’s family be appearing in the Post Cookbook, Ken told her that she must submit her recipe for Poppyseed Cake, one of his favorites. Kevin, on the other hand, requested the Chocolate Fudge recipe, which is a favorite of his. Both are tasty, sweet treats. Cook, covered, on low heat 1 hour; drain. Combine remaining ingredients, mix well. Add sauce to spareribs. Bake for one hour at 350 degrees. CABBAGE, KIELBASI AND SEA SHELLS 1 ring smoked kielbasi 1 sm. head cabbage % c. margarine 1» 1b. sea shell macaroni Shred cabbage cour- sely. Sautee in margarine until tender. Cut kielbasi into small chunks. Place on top of cabbage. Cook long enough to heat the kielbasi through. Cook and drain shells. Add to kielbasi and cabbage. The cars are displayed on the actual finish line of the derby track, which just fits inside the library’s glass case. January is usually derby month with Cub Scouts and each Cub is given his kit in December. They are given a month to complete the car. The kit has the pinewood block of wood, four axles and four wheels. Cubs must draw a design, cut it out of the block, sand, and paint it with their own personnal design. A little bit of nostalgia from yesterday --- almost 20 years ago --- the three cars on the end of the track are a little bit dif- ‘ferent looking and the comparison is interesting. One ‘blue mountaineer’ made in 1964 belongs to Cliff Kozemchak and a ‘red fireball’ from 1966 and a ‘yellow racer’ from 1967 were borrowed from Glen Kozemchak. The type of advancement in our world today is very evident when comparing the styles of these cars. JACKSON CPR COURSE Jackson Township Volunteer Ambulance Association will meet tonight at 7:30 in the Jackson Township fire hall. President Edward Havrilla will preside and extends an invitation to interested residents of Jackson Township to attend. Plans will be discussed at tonight's session for a Red Cross lecture CPR (Cardio-Plumonary Resuscitation) course to be given next month. Tentatively slated to be held for 9 to 12 hours, the course will begin on Thursday, March 18, and will be held on Tuesdays, March 23 and March 30, and on Thursday, March 25. Jackson Township residents 13 years of age or older interested in becoming members of the. Volunteer Ambulance Corps are invited to at- tend tonight’s meeting.
