Freezing fresh fruit a cinch § 2 Most fresh fruit is a cinch 3 to freeze. In fact, freezing’s probably the easiest way to preserve it. Handle only fairly small quantities -- two or three quarts at a time. Wash in a wire basket, dunking deep into cold water. After peeling, trimming, pitting, etc., fix fruit much as you would if you were serving it fresh. » Cut large fruits to con- { venient size, or crush. Leave small fruits whole, or crush if you wish. Crush | soft fruits with a wire : potato masher. For firm ones, use a food chopper. Don’t use a blender or you'll wind up with puree, or even soup. Fruit may be frozen in rigid containers or plastic bags, using either dry or } liquid pack. Remember to leave head room for fruit to expand as it freezes. It has a tendency, also to float to the top where it will change color when exposed to air, so crumple waxed paper or plastic wrap on top to held fruit under the syrup.
