Here's How
Does your family like jelly?
What you buy in the store these
days is pretty expensive for a
shockingly small glass or jar. But
you can have plenty of jelly as a
sideline to making apple-sauce, and
of course you make apple sauce for
the children all winter. Every time
you make it, you have the makings
for a glass of jelly.
Do you peel your apples first
and take out the cores, or do you
quarter them, stew them up and
then run them through the Foley
Mill ?
If you peel them, put the peels
and the cores into a small sauce-
pan, cover with water, and boil
briskly until the peels are limp
and lifeless, the cores a pulp. Pour
this liquid through a strainer and
measure.
Measured ?
Pour it back in the saucepan
and boil it down to one-half.
If you had a cupful of juice be-
fore boiling, measure out a cupful
of sugar. When the liquid is re-
duced in bulk, add the sugar, tak-
ing the pan off of the fire while
you stir it to make it dissolve.
Then boil it again. It will rise up
in the pan, and you'll have to
watch it, to keep it from running
over. It will make ‘a jelly test al-
most at once, especially if the
apples were nice green ones.
A jelly test? It’s when two
thick streams run off the edge of
your cooking spoon instead of one
thin stream, and sometimes there’s
a little sheet between the streams.
If the jelly isn’t too solid, a bit
runny, it’s exactly right to put on
French toast or pancakes. If it’s
good and solid, it’s for toast. Who
cares, just so it’s jelly.
And it didn’t cost you anything
except the sugar.

dominal ailment, David K. Niles,
confidant of Presidents Roosevelt
and Truman, was reported in
“poor” condition at Beth Israel
Hospital, Boston, Mass. The presi-
dential advisor, readmitted to the
hospital on Sept. 13th, underwent
